Sweet spot Outstanding. Elegant if restrained aromas are cool and pure with notes of apple, acacia blossom, lemon-lime and a whiff of mineral reduction. The racy and wonderfully refined middle weight flavors are lacy, indeed almost delicate, with plenty of lovely underlying tension on the lingering and impeccably well-balanced finale. This is pretty much classic Bouchères that should age well over the medium-term. In a word, lovely.

Another perfect wine is the 2015 Ermitage le Meal Blanc. The most decadent, unctuous and layered in the lineup, with to-die-for notes of white currants, toasted nuts, celery seed and licorice, it hits the palate with full-bodied richness, a huge mid-palate and a refreshing, pure, yet blockbuster finish that just won’t quit. If I had to pick a desert island white, this might be it.

This is a very thick, dense DP with layers of ripe fruit. Dried apple, pineapple and pie crust with some nougat undertones. Dense and layered with chewy tannins and a juicy finish. Umami undertone. This has the highest percentage of pinot noir ever. 15 years on the lees in bottle. 62% pinot noir and 38% chardonnay. Drink or hold.

The 2015 Chablis Les Preuses Grand Cru is bright, precise and crystalline - in other words, a classic expression of this great grand cru. White flowers, crushed rocks, mint and slate all run through this super-expressive, nuanced Chablis from Dauvissat. Even in this warm, radiant vintage, the personality of Preuses comes through loud and clear - and that is perhaps the greatest compliment I can pay to this wine.

My birth year will not go down in history as the stuff of legends: a relatively cool year without much botrytis and a fairly low residual level for the 1981 Moulin Touchais Coteaux du Layon. It's a touch smoky with some earthy characters alongside sweet apple. While it's sweet (76g/L) and round, it retains a surprising amount of tension, providing an almost refreshing finish. It's a fairly straightforward sweet style with modest length but it provided good milestone toasting.

The 2021 Chablis Fôret 1er Cru is where things start getting serious for Raveneau with a chiselled, orange blossom and flinty bouquet that unfurls nicely in the glass. The palate is well balanced with a fine thread of acidity, subtle apricot and quince notes surfacing with time, quite elegant, almost dainty in style with a persistent finish. Very fine.

(Outstanding) A more elegant and ultra-cool nose reveals its combination of floral, citrus zest, iodine and that briny sea water character the best examples of Chablis all seem to possess, all of which is trimmed in moderate but not invasive wood. There isn't quite the same volume on the palate as the Butteaux, but the middleweight flavors are notably more refined before terminating in a driving, chiseled and citrusy bone-dry finale. I very much like the focused power of the finish and this classy effort should also amply reward extended cellaring.

The 2021 Chablis Blanchots Grand Cru has the most "classic" or what you might call "old school" bouquets amongst Raveneau's 2021s and I love it: razor-sharp, struck flint and granite scents. The palate is very taut on the entry, linear, a vertical Chablis that feels very long with a saline finish that lingers in the mouth. What a superb Blanchots - one for Chablis purists.

It's not the most expressive today, but wait for it to awaken. This is built for cellaring.
