Spring flowers, turmeric, bright berry fruits and a slow and steady lift. Feels like an entirely different expression of classic Bordeaux varieties (Syrah aside) that highlights the impact of altitude, and just brings a ton of personality to the glass. Maxence Dulou winemaker. Shorter ageing also, in a bigger variety of containers - 30% new barrel, 30% neutral barrel, 40% stoneware jar for 12 months followed by 5 months in stainless steel vats. Only 59% of grape harvested entered in Ao Yun, with the rest going into the new village wines, and in this vintage 72% of the blend Ao Yun blend is from the two coolest villages of Adong (2600m) and Shuori (2500m).

    The 2019 Chambertin Clos-de-Bèze Grand Cru clearly has more intensity than the Chambertin. True, it is showing a little more wood at the moment, but I also find more fruit – raspberry and wild strawberry – interlaced with shavings of black truffle and forest fern. The palate is medium-bodied with supple but firm tannins. This is endowed with impressive depth and body weight and yet it retains disarming elegance on a finish that fans out gloriously. "This is the business" is the phrase that passed through my mind as I tried to keep a stoic face after encountering this fabulous Clos-de-Bèze.

Fermented in stainless steel with indigenous yeast without added SO2 (which is added only at bottling). Total of 20 days on the skins. Part of the wine was aged on the fine lees in stainless steel and part in concrete. ‘We macerate for a shorter time in warm years, but longer in cooler years to get softer tannins. In warmer years there is just no need and with longer maceration in warm years you lose freshness.’ Cask sample 1: Youthful mid ruby. Pure and focused red-fruit nose with a little lift and a hint of raw meat. Succulent and a little vibrant on the attack. Savoury, sappy, red-fruit finish with soft, coating tannins. Refreshing and original. Cask sample 2: Just mid ruby. A little deeper with minerally, earthy notes and hints of iron. Vibrant, lifted raspberry fruit and sandpapery tannins. Truly complementary to cask sample 1. (WS)

    The 1959 Batailley mirrors previous encounters with this Pauillac. It has a typically opulent bouquet that is the signature of the vintage with mulberry and boysenberry fruit, juniper berries and thyme. I find this example less meaty than previous bottles, though. The palate is well defined with fine tannin, quite tensile with cedar and graphite towards the finish. It does not quite possess the panache of the 1961, which can be marvelous on the day. But I appreciate the generosity after so many years. Tasted at the château.

    Field blend of Chiavennasca (Nebbiolo), Rossola, Pignola, Brugnola and Negrera, all rare local varieties. Fermented in stainless steel with indigenous yeast without added SO2 (which is added only at bottling). Total of 20 days on the skins. Part of the wine was aged on the fine lees in stainless steel and part in concrete. ‘We macerate for a shorter time in warm years, but longer in cooler years to get softer tannins. In warmer years there is just no need and with longer maceration in warm years you lose freshness.’ Cask sample 1: Youthful mid ruby. Pure and focused red-fruit nose with a little lift and a hint of raw meat. Succulent and a little vibrant on the attack. Savoury, sappy, red-fruit finish with soft, coating tannins. Refreshing and original. Cask sample 2: Just mid ruby. A little deeper with minerally, earthy notes and hints of iron. Vibrant, lifted raspberry fruit and sandpapery tannins. Truly complementary to cask sample 1. (WS)

    The 1959 Batailley mirrors previous encounters with this Pauillac. It has a typically opulent bouquet that is the signature of the vintage with mulberry and boysenberry fruit, juniper berries and thyme. I find this example less meaty than previous bottles, though. The palate is well defined with fine tannin, quite tensile with cedar and graphite towards the finish. It does not quite possess the panache of the 1961, which can be marvelous on the day. But I appreciate the generosity after so many years. Tasted at the château.
