The NV Pedro Ximenez Solera 1927 is non-vintage, but does have some 1927 material in it. This is totally dark brown/amber with notes of figs, toffee, caramel syrup, molasses and coffee. It is dense, super sweet, intense, rich and an amazingly, unctuously textured, thick beverage to consume slowly and introspectively after a meal. Drink now through 2050, or even longer.

This is a three-way assemblage: three grape varieties – and equal percentage of Pinot Noir and Chardonnay with 20% of Pinot Meunier – and a blend of 3 vintages, 2009, 2010 and 2012. The nose is full of flavours and rich with notes of white flowers and crème patissière. However, the palate is crisp, fresh and delicate with a lovely creamy texture. It is elegant, refined and very stylish (unlike the bottle!). It’s a pleasant combination of power and concentration blended with finesse and elegance. While the dosage is 9g/l, it feels much drier, more like a 5g/l and this probably due to the spinal cord of acidity.

Seductive and well-judged ‘reductive’ (smoky, struck-match) aroma and really toasty as it opens up, something cedary. Very Coche Dury but, most importantly, there is the fruit intensity to carry off this winemaking style. Nutty, creamy, mealy citrus. So many things going on that it makes you slow down to try to enjoy all this complexity. Deep, deliciously fresh and incredibly persistent with an aftertaste of savoury/mineral citrus. Worth every penny of its NZ price of $45 (from the producer's website). Classy and got better and better over the few days post opening.

The wine is almost completely dominated by the extremely exciting and rare Tauxières Premier Cru, which is one of two villages classified 99% on the Grand Cru scale. Despite an impressive vineyard area of 237 hectares, it is extremely rare to come across champagnes dominated by this fantastic Cru. A cooler microclimate and a thinner soil layer with even more compact chalk than sunny Bouzy make the wines from here lighter and more elegant than Bouzy but stronger than Verzenay which is also part of this exciting Blanc de Noirs with predominantly base from 2017. Here is also a small splash of Avenay to give a little buttery roundness to the cuvée with its low dosage of 4 grams. The reserve wines that always come from magnum bottles under low pressure make up 48% from three vintages in 2016, 2009 and 2006. In total, half of the wine is made in oak barrels and the other half in steel tanks. The result is very beautiful and personal. The scent has features of lead pencil, juniper and freshly lacquered boat together with more classic coffee notes, rose petals, apricot and peach. The taste is vivid and multifaceted with a lively precision, lighter fruit aromas than you normally find in Bollinger's wines. Even cassis is one of the more unexpected aromas in this finely tuned complex symphony. Very impressive and exciting champagne that really makes me want to taste more and that I will look out for to my private cellar.

Bollinger’s 2009 Vieilles Vignes Françaises is tightly wound and reserved, which is quite surprising given the warm, dry weather of the vintage. That won’t be a problem in time, of course, but readers should plan on being patient. With a few hours of air, apricot, plum, spice, dried cherry and candied orange peel start to appear, but the 2009 remains rather taut. In some years, VVF can be quite opulent, 2002 and 2010 come to mind. The 2009, on the other hand is much more vibrant. I wouldn’t plan on opening a bottle anytime soon. VVF remains one of the most compelling wines – still or sparkling – in the world. It emerges from ungrafted Pinot Noir vines in Aÿ’s Chaudes Terres and Clos St. Jacques lieu-dits and is vinified and aged in barrel. Dosage is 4 grams per liter. (Originally published in August 2020)

Perhaps the most famous of the Dagueneau cuvées, the 2018 Silex is flowing and accessible on entry, but then it coils and tightens. The silex (flint) soil gives firmness, imbuing structure and steely tension. Power and concentration combine, providing an almost waxy texture on the finish. Flavors of spiced apples, almonds and pastry linger. It's just not quite as long as expected. Tasted over three days.

The palate is well balanced with fine acidity, more density than the La Grande Montagne, impressive weight and salinity that gets the saliva flowing on the finish. Excellent.

(13.5% natural alcohol): Pale lemon-yellow. Much more closed on the nose than the old-vines Vaillons, hinting at honeysuckle. Tighter in the mouth than the Vaillons as well but still in a supple, rich style for this cuvée, with an element of sweetness nicely buffered by firm acidity. Spreads out impressively to saturate the palate on the silky finish, with piquant notes of lemon oil and ripe grapefruit lingering.

The 2017 Chablis Les Preuses Grand Cru is a dense, powerful wine. Time in the glass brings out a good deal of Preuses mineral and floral character. As always, the Preuses spends a year in oak and a year in tank. The first year imparts a level of power and richness that, in my view, masks some of the subtleties of Preuses . There is plenty of depth and nuance here, but I feel there could maybe have been even more.

The 2019 Puligny-Montrachet Champ Canet 1er Cru has a very attractive nose with enticing scents of nectarine, tinned white peaches, Braeburn apples and a light chalky note. The palate is well balanced with orange pith, apricot and lychee notes on the entry. This Champ Canet has fine depth and good tension, the mouth tingling with spicy residues after it has departed. Excellent.

A hint of green apples and real lightness of touch – and alcohol. Wait a bit…

Even cassis is one of the more unexpected aromas in this finely tuned complex symphony. Bollinger’s 2009 Vieilles Vignes Françaises is tightly wound and reserved, which is quite surprising given the warm, dry weather of the vintage. That won’t be a problem in time, of course, but readers should plan on being patient. With a few hours of air, apricot, plum, spice, dried cherry and candied orange peel start to appear, but the 2009 remains rather taut. In some years, VVF can be quite opulent, 2002 and 2010 come to mind. The 2009, on the other hand is much more vibrant. I wouldn’t plan on opening a bottle anytime soon. VVF remains one of the most compelling wines – still or sparkling – in the world. It emerges from ungrafted Pinot Noir vines in Aÿ’s Chaudes Terres and Clos St. Jacques lieu-dits and is vinified and aged in barrel. Dosage is 4 grams per liter. (Originally published in August 2020)

Perhaps the most famous of the Dagueneau cuvées, the 2018 Silex is flowing and accessible on entry, but then it coils and tightens. The silex (flint) soil gives firmness, imbuing structure and steely tension. Power and concentration combine, providing an almost waxy texture on the finish. Flavors of spiced apples, almonds and pastry linger. It's just not quite as long as expected. Tasted over three days.

(13.5% natural alcohol): Pale lemon-yellow. Much more closed on the nose than the old-vines Vaillons, hinting at honeysuckle. Tighter in the mouth than the Vaillons as well but still in a supple, rich style for this cuvée, with an element of sweetness nicely buffered by firm acidity. Spreads out impressively to saturate the palate on the silky finish, with piquant notes of lemon oil and ripe grapefruit lingering.

The 2017 Chablis Les Preuses Grand Cru is a dense, powerful wine. Time in the glass brings out a good deal of Preuses mineral and floral character. As always, the Preuses spends a year in oak and a year in tank. The first year imparts a level of power and richness that, in my view, masks some of the subtleties of Preuses . There is plenty of depth and nuance here, but I feel there could maybe have been even more.

The 2019 Puligny-Montrachet Champ Canet 1er Cru has a very attractive nose with enticing scents of nectarine, tinned white peaches, Braeburn apples and a light chalky note. The palate is well balanced with orange pith, apricot and lychee notes on the entry. This Champ Canet has fine depth and good tension, the mouth tingling with spicy residues after it has departed. Excellent.
