Pascal Agrapart uses unfermented juice from the following harvest, in this case 2016 (rather than sugar), to create the secondary fermentation in bottle, also known as prise de mousse, in which still wine becomes Champagne. Vinification in oak and aging on the cork seems to really bring out soft contours to match the wine's sculpted, translucent feel.     From 40+ year old Chardonnay vines grown in nearby terroirs of Cramant and Avize on very chalky soils, fermented 50% in oak barrels (the Avize part) and bottled unfiltered in May 2009, the 2008 Extra Brut Blanc de Blancs Grand Cru Minéral was disgorged manually after five years. This is pure, dry and very elegant Champagne expressing the chalky terroir of its origin in a very straightforward and mineral way. Ripe and cooked apples, along with raisin and flavors on the chalky-fruity nose, lead to a firmly structured Champagne with a great purity of fruit and a persistent minerality in the complex finish. However, the finish is also somewhat drying and rough from this bottle, but it gets better with aeration and should be served in glasses that are not too small.

The Vénus is such a special Champagne, as it is elusive and constantly changing in the glass as it shows a different side of its personality with each taste. The palate is well balanced, with a taut line of acidity, and quite saline in the mouth. The sharp, slightly flinty finish oddly reminds me of a mature Chablis. Very fine.

There is a light saline lick toward the finish that becomes nuttier with aeration, although this does not quite deliver the complexity of Alheit’s best Chenin Blancs. Still, it is a lovely white blend that should age with style.

    The resculpting of Ao Yun over the past few years continues here, wiith medium to full intensity ruby colour coupld with nuanced fragrant spices of rosemary, bay leaf and sage that burst out of the glass. Spring flowers, turmeric, bright berry fruits and a slow and steady lift. Feels like an entirely different expression of classic Bordeaux varieties (Syrah aside) that highlights the impact of altitude, and just brings a ton of personality to the glass. Maxence Dulou winemaker. Shorter ageing also, in a bigger variety of containers - 30% new barrel, 30% neutral barrel, 40% stoneware jar for 12 months followed by 5 months in stainless steel vats. Only 59% of grape harvested entered in Ao Yun, with the rest going into the new village wines, and in this vintage 72% of the blend Ao Yun blend is from the two coolest villages of Adong (2600m) and Shuori (2500m).

    The 2019 Chambertin Clos-de-Bèze Grand Cru clearly has more intensity than the Chambertin. True, it is showing a little more wood at the moment, but I also find more fruit – raspberry and wild strawberry – interlaced with shavings of black truffle and forest fern. The palate is medium-bodied with supple but firm tannins. This is endowed with impressive depth and body weight and yet it retains disarming elegance on a finish that fans out gloriously. "This is the business" is the phrase that passed through my mind as I tried to keep a stoic face after encountering this fabulous Clos-de-Bèze.

Macerated black cherry, lavender, sage, spice, coffee and leather are some of the many notes that open over time in a Barolo that is deep yet also wonderfully transparent. The 2017 is so nuanced, so complex, so beautiful. It is also easily the best wine I have tasted from Burzi.

The palate is beautifully balanced with a slightly oily-textured opening, the intensity deftly counterbalanced by the fine bead of acidity, and a discreet spiciness toward the finish. This is very harmonious and persistent, an effortless Cartology that should age with style. Superb.

The palate is well balanced, with a taut line of acidity, and quite saline in the mouth. The sharp, slightly flinty finish oddly reminds me of a mature Chablis. Very fine.

There is a light saline lick toward the finish that becomes nuttier with aeration, although this does not quite deliver the complexity of Alheit’s best Chenin Blancs. Still, it is a lovely white blend that should age with style.

    The resculpting of Ao Yun over the past few years continues here, wiith medium to full intensity ruby colour coupld with nuanced fragrant spices of rosemary, bay leaf and sage that burst out of the glass. Spring flowers, turmeric, bright berry fruits and a slow and steady lift. Feels like an entirely different expression of classic Bordeaux varieties (Syrah aside) that highlights the impact of altitude, and just brings a ton of personality to the glass. Maxence Dulou winemaker. Shorter ageing also, in a bigger variety of containers - 30% new barrel, 30% neutral barrel, 40% stoneware jar for 12 months followed by 5 months in stainless steel vats. Only 59% of grape harvested entered in Ao Yun, with the rest going into the new village wines, and in this vintage 72% of the blend Ao Yun blend is from the two coolest villages of Adong (2600m) and Shuori (2500m).

    The 2019 Chambertin Clos-de-Bèze Grand Cru clearly has more intensity than the Chambertin. True, it is showing a little more wood at the moment, but I also find more fruit – raspberry and wild strawberry – interlaced with shavings of black truffle and forest fern. The palate is medium-bodied with supple but firm tannins. This is endowed with impressive depth and body weight and yet it retains disarming elegance on a finish that fans out gloriously. "This is the business" is the phrase that passed through my mind as I tried to keep a stoic face after encountering this fabulous Clos-de-Bèze.
