Rich, ample and mineral but also intensely perfumed, the Avizoise has so much going on. Vinification in oak and aging on the cork seems to really bring out soft contours to match the wine's sculpted, translucent feel. From 40+ year old Chardonnay vines grown in nearby terroirs of Cramant and Avize on very chalky soils, fermented 50% in oak barrels (the Avize part) and bottled unfiltered in May 2009, the 2008 Extra Brut Blanc de Blancs Grand Cru Minéral was disgorged manually after five years. This is pure, dry and very elegant Champagne expressing the chalky terroir of its origin in a very straightforward and mineral way. Ripe and cooked apples, along with raisin and flavors on the chalky-fruity nose, lead to a firmly structured Champagne with a great purity of fruit and a persistent minerality in the complex finish. However, the finish is also somewhat drying and rough from this bottle, but it gets better with aeration and should be served in glasses that are not too small.

The Vénus is such a special Champagne, as it is elusive and constantly changing in the glass as it shows a different side of its personality with each taste. The resculpting of Ao Yun over the past few years continues here, wiith medium to full intensity ruby colour coupld with nuanced fragrant spices of rosemary, bay leaf and sage that burst out of the glass. Spring flowers, turmeric, bright berry fruits and a slow and steady lift. Feels like an entirely different expression of classic Bordeaux varieties (Syrah aside) that highlights the impact of altitude, and just brings a ton of personality to the glass. Maxence Dulou winemaker. Shorter ageing also, in a bigger variety of containers - 30% new barrel, 30% neutral barrel, 40% stoneware jar for 12 months followed by 5 months in stainless steel vats. Only 59% of grape harvested entered in Ao Yun, with the rest going into the new village wines, and in this vintage 72% of the blend Ao Yun blend is from the two coolest villages of Adong (2600m) and Shuori (2500m).

The 2019 Chambertin Clos-de-Bèze Grand Cru clearly has more intensity than the Chambertin. True, it is showing a little more wood at the moment, but I also find more fruit – raspberry and wild strawberry – interlaced with shavings of black truffle and forest fern. The palate is medium-bodied with supple but firm tannins. This is endowed with impressive depth and body weight and yet it retains disarming elegance on a finish that fans out gloriously. "This is the business" is the phrase that passed through my mind as I tried to keep a stoic face after encountering this fabulous Clos-de-Bèze.

This is clearly one of the most concentrated d’Armailhacs that has been produced in recent decades owing to the extremely small and concentrated berries, especially Cabernet Sauvignon, harvested at the end of the growing season. It’s also one of the best, with clear personality and power, and although still the least complex of the three Pauillacs in the Mouton stable, it should offer the best value giving a ton of rich fruit and cigar box frisson. 5% Petit Verdot makes up the blend. 3.7pH. Tasted several times – always with the same impression.

A worthy successor to the super 2008, Delamotte's 2012 Blanc de Blancs is performing very well—despite the fact that it was disgorged as recently as June 2019. Opening in the glass with aromas of citrus oil, dried white flowers, smoke and wheat toast, it's medium to full-bodied, deep and concentrated, with a bright girdle of acidity, well-integrated dosage and a fine mousse, the muscularity of the vintage rendered with uncommon finesse. While this is quite expressive for such a recently disgorged vintage Delamotte, the rewards of even only a few years' patience will be considerable.

The 2008 Dom Pérignon is once again stunning. More than anything else, I am surprised by how well the 2008 drinks given all the tension and energy it holds. Then again, that is precisely what makes 2008 such a unique vintage namely that the best wines are so chiseled and yet not at all austere. Lemon peel, almond, mint, smoke and crushed rocks are all finely sculpted, but it is the wine’s textural feel, drive and persistence that elevate it into the realm of the sublime. The 2008 will be even better with time in the cellar, but it is absolutely phenomenal even today, in the early going. Three recent bottles have all been nothing short of magnificent.

This is clearly one of the most concentrated d’Armailhacs that has been produced in recent decades owing to the extremely small and concentrated berries, especially Cabernet Sauvignon, harvested at the end of the growing season. It’s also one of the best, with clear personality and power, and although still the least complex of the three Pauillacs in the Mouton stable, it should offer the best value giving a ton of rich fruit and cigar box frisson. 5% Petit Verdot makes up the blend. 3.7pH. Tasted several times – always with the same impression.

Opening in the glass with aromas of citrus oil, dried white flowers, smoke and wheat toast, it's medium to full-bodied, deep and concentrated, with a bright girdle of acidity, well-integrated dosage and a fine mousse, the muscularity of the vintage rendered with uncommon finesse. While this is quite expressive for such a recently disgorged vintage Delamotte, the rewards of even only a few years' patience will be considerable.

The 2008 Dom Pérignon is once again stunning. More than anything else, I am surprised by how well the 2008 drinks given all the tension and energy it holds. Then again, that is precisely what makes 2008 such a unique vintage namely that the best wines are so chiseled and yet not at all austere. Lemon peel, almond, mint, smoke and crushed rocks are all finely sculpted, but it is the wine’s textural feel, drive and persistence that elevate it into the realm of the sublime. The 2008 will be even better with time in the cellar, but it is absolutely phenomenal even today, in the early going. Three recent bottles have all been nothing short of magnificent.
