The nose is remarkably fine and complex, expressing scents of orchard fruit, white peach, apricot, and lemon with a touch of verbena. On the palate, the immediate impression is of a certain unctuosity providing great charm, and even the structure has round contours, but it seems to tighten on the chalky, airborne finish. The salinity that marked the previous two iterations of this PN series seems less present, with this one having more notes of pastry and hazelnuts as well as some zesty citrus, but airing adds an iodine-like tang. This is a Champagne that should pair well with fresh fish and shellfish dishes. 100% Pinot Noir. Dosage: 4 g/L. Disgorgement: January 2022.

The presentation is brilliant and is reminiscent of the house's legendary blanc de noirs Bollinger ’Vieilles Vignes Françaises’….. A Verzenay blanc de noirs with sprinkles of Aÿ, Bouzy and Tauxières, where 50% of the wine comes from 2015 with reserve wines on magnum dating from 2009. Verzenay and Aÿ are, as you know, the dominant villages in Bollinger's vintage wines. Verzenay is often the chalky and mineral-rich backbone of Bollinger's vintage build-up. The wine is vibrantly fresh, mineral-driven and extremely pure. There is a clarity and sharpness that is outstanding, where gunpowder notes and aroma of grilled meat develop as the glass warms up slightly. I love this wine as it is a perfect creation from one of the most important villages in the whole of Champagne dominated by the aforementioned minerality, but also with notes of violet and red grapefruit so typical of Verzenay of the highest class. On aeration the scent develops more and more notes of pears, figs and freshly baked baguette and the taste develops towards peach and apricot jam. Personally, though, I will wait as long as I can before opening my own bottles to get the increasing depth of caramel and grilled hazelnut flavour that only time in the cellar can provide.

The 2020 Ermitage Le Pavillon is pure gold, and Hermitage doesn't get any better. Incredible aromatics of cassis, graphite, burning embers, and crushed stone all emerge from this beauty. Stunningly proportioned and incredibly pure, it's full-bodied, concentrated, and powerful, but as with all great vintages of this cuvée, it's going to demand bottle age. While Les Greffieux and Le Méal bring much more opulence, this is the powerhouse, long-distance candidate in the lineup. It's an incredible effort. Give bottles upwards of a decade in the cellar, and it should evolve effortlessly over the following 30-40 years.

A very impressive behemoth, this is going to need a good seven to 10 years to truly show its stuff and should drink for a good 40 years and beyond.

The 2021 Chardonnay Hyde Vineyard needs quite a bit of coaxing to unlock notes of ripe yellow apples, grapefruit oil, orange peel, and juicy peaches, leading to wafts of wet slate, shaved ginger, and almond croissant. The medium-bodied palate has super-charged intensity, delivering layer upon layer of citrus, stone fruit, and mineral flavors with a silky texture and laser-precise acidity, finishing with incredible length and so many citrus and mineral sparks. This is phenomenal Chardonnay! These Hyde Vineyard vines were planted in 1986. "Hyde were the first to do custom growing and they do it so well," commented DuMOL's winemaker, Andy Smith. "The shoot growth in 2021 was very low and the yields were down from a typical 21 barrels to 17 barrels. But I believe this is the best quality is the best they've ever had from here." I agree. For number crunchers, the pH is 3.38, and ABV is 13.7%.

This is relatively evolved, and supple and voluptuous for a young Harlan estate – hence the comparison with their compelling 2002. Gorgeous smooth mouthfeel with some milk chocolate dusting on the fruit, tannins are delicate and softly mouth filling with a lovely salinity to the palate - creamy and unctuous but at the same time there's lots of acidity. This has a verticality to it, layered but with an aerial quality too, the flavours just glide across the palate with lift on the finish - so satisfying and drinkable. The 2021 Pinot Noir Finn pours a jeweled ruby and is sourced from two vineyards. It offers up nearly ripe, attractive smoky notes of cherry, cracked pepper, and dusty earth. Full-bodied, it’s expansive on the palate, with ripe black raspberry, pine, and anise. This needs time but is well structured and has excellent balance.

Composed of 36% Cabernet Franc, 34% Cabernet Sauvignon, and 30% Merlot, the 2019 Figeac is deep garnet-purple colored. It needs considerable swirling to coax out its alluring perfume of redcurrant jelly, juicy blackcurrants, and blackberries, with underlying suggestions of candied violets, chocolate box, fragrant earth, and lavender plus a touch of crushed rocks. Medium to full-bodied, the palate has a mind-blowing array of layers with exceptionally ripe, fine-grained tannins and jaw-dropping tension, leading to a fantastically persistent mineral and floral-tinged finish that makes your heart stop. With its energy, structure, and incredible depth, truly, this is a towering triumph.

A massive bouquet of black fruits, bloody meats, ground pepper, scorched earth, iron, and truffle all emerge from this dense, powerful monster of a Côte Rote that's flawlessly balanced, has perfect tannins, and sensational levels of concentration and extract. It should hit prime time in around a decade and evolve for 40-50 years.

The 2012 Harlan Estate is reminiscent of their 2002. Probably a candidate for perfection with another 4-5 years of bottle age, the wine is inky plum/purple to the rim and offers a gorgeous nose of scorched earth, blackberry and cassis, forest floor, and a floral, lavender-like component followed by deep, opulent, majestic flavors that caress the palate with high but sweet tannin. This is relatively evolved, and supple and voluptuous for a young Harlan estate – hence the comparison with their compelling 2002. This wine can be drunk in several years and is likely another candidate for 30-50 years of cellaring.

The NV Esprit Nature is a fabulous introduction to this range. Creamy, open-knit and so expressive, the Esprit Nature captures all of the textural intensity that is such a Giraud signature, but in an approachable style. The Esprit Nature is 80% Pinot Noir and 20% Chardonnay done mostly in oak, with a bit of sandstone amphora. This release is based on 2017, 50% reserve wines. Beautiful fragrance to the nose, perfumed and delicate yet so expressive, nothing out of balance with cherries and violets bursting out of the glass. Gorgeous smooth mouthfeel with some milk chocolate dusting on the fruit, tannins are delicate and softly mouth filling with a lovely salinity to the palate - creamy and unctuous but at the same time there's lots of acidity. This has a verticality to it, layered but with an aerial quality too, the flavours just glide across the palate with lift on the finish - so satisfying and drinkable. Just a glorious, shining, bright, velvety, succulent glass of wine. Pure elegance. A blend of 55% Cabernet Sauvignon, 44% Merlot and 1% Petit Verdot, 3.55pH.
