Valpolicella Classico Superiore Ripasso is unique and really quite costly to produce. Made from 40% Covina, 30% Corvinone and 30% Rondinella and Molinara, this wine goes through two fermentations – the first one beginning after 15 days of maceration, whilst the second occurs after the addition of the famous Amarone air-dried grape skins to the tank. After an extended maturation period of 24 months, the finished Valpolicella Classico Superiore Ripasso typically showcases a mixture of delicate primary red fruits and sumptuous dried fruit notes.

 

In many ways a hybrid of Valpolicella and Amarone, this “beautiful, intelligent” wine commands an affordable price. Deservedly awarded a “gold medal score” of 18.5/20 points from Matthew Jukes, this “elegant wine” carries “extra weight and darker fruit tones”, coupled with an “uncommon succulence”. Unlike Valpolicella which is made solely for immediate consumption, this wine “possesses considerably staying power too”. In turn, Valpolicella Classico Superiore Ripasso does not require the patience of a saint necessary to coax the very best from bottles of Amarone - this is wine to be enjoyed at every stage of its life.

Monte Santoccio

Nicolas Ferrari is a winemaker with Giuseppe Quintarelli pedigree. Cutting his teeth as assistant to the most prestigious Amarone winemaker from the age of 26, he quickly learnt valuable lessons such as the importance of exercising total control in the vineyard and the winery to produce outstanding Valpolicella. Setting out on his own, Ferrari established Monte Santoccio in Fumane - the heart of Valpolicella Classico. Today, Nicolas Ferrari manages just 4 ha of organically farmed vines. Production is extremely limited with only 25,000 – 30,000 bottles in total each year. His wines have been described as “real thinking wines” (The Telegraph), displaying sensational complexity that is, indeed, thought-provoking.
