    About Bibi Graetz

    Born into a family of prodigious artists in the gorgeous region of Tuscany in central Italy, Bibi Graetz experienced a phenomenon well-traversed by a number of the world’s greatest vignerons – he fell in love with the terroir and vines of his homeland.

    Having grown up on the hill of Fiesole, overlooking Florence, Graetz felt the irresistible pull to found his eponymous winery in 2000 in this very area. Not content with such a commitment to Tuscany, the artist even built and moved his family to the new winery, called Aurora, situated in the main square of Fiesole.

    Viniculture

    Graetz found himself particularly fascinated by old vines – and as such has assembled one of the largest holdings of old vineyard plots in the entire region. An impressive feat in a mere 20 years given the head start rival Super Tuscans have. The focus on ancient aspects of Italian winemaking has led the rebellious winemaker to shun both traditionalist Chianti constraints, as well as the established Super Tuscan behemoths stridently pursuing Bordeaux blends.

    Bibi Graetz masterfully combines aspects of both schools of thought – proudly championing the traditional varietals of Sangiovese, Canaiolo and Colorino, whilst utilising artisanal techniques such as spontaneous fermentation, manual punching-down and open-top barriques.

    A maverick figure on the Super Tuscan scene, Colore is the flagship wine of this enigmatic winery. Colore is a pure expression of Tuscany, with traditional varieties blended in glorious harmony. Sangiovese provides structure and breath-taking power, Colorino carries pure fruits and fine tannins whilst Canaiolo is the mineral backbone. Sourced from three vineyards in Lamole, Siena and Vincigliata, a handful of the finest barrels representing a fraction of the entire harvest are selected to become Colore. This is unbelievably rare, with only 225 cases produced.

    The 2007 Colore harkens back to a period that produced wildly uneven wines here. Dark cherries, plums, tobacco, cloves and licorice open up on the pliant, mid-palate, but that's pretty much it. The finish is short, compact and attenuated. Overall, the 2007 Colore is a far cry from Bibi Graet'z best wines. Colore is a Sangiovese/Canaiolo/Colorino blend. Both bottles I tasted were disappointing.

    Just love this wine, the lyricism and the generosity of it, and its always vivid depiction of fruits and stones. So juicy, so drawn out, works with the vintage, leans into its low yields, with greengages, raspberry, plum, gentle spices, lemongrass, minerality studded with mandarin peel and sage. Translucent and yet full of flavour, once again it begs you to draw up a chair, gather friends, and enjoy. What a brilliant wine and a brilliant winemaker in Bibi Graetz. From a 58ha estate, Colore comes from the oldest vineyards of Sangiovese that range up to 135 years old.

    Wild roses and wild strawberries, the nose has a lovely fragrance and expression. Lifted and bright, this has such a beautiful delicacy to it, a creamy, chalkiness comes from the fine tannins with bright, succulent strawberry and raspberry leaf elements. You feel the savoury side too, the sweet vanilla spice and dried herb aspect which counter the fruit and the high acidity. I adore the finesse here, the sharp fruit giving the energy and the chalky texture giving the layers. Feels well controlled, powerful yet delivered with poise. It doesn't have so much overt weight, it's definitely more ethereal in terms of density, but the nuance of flavour is thrillingly captivating and this has a long lifted finish. A contemplative wine that keeps you wanting more and more. Made in new winery facilities in Fiesole. Grapes were picked from the best six vineyards; Vincigliata, Olmo, Londa, Lamole, Montefili and Siena with each divided into parcels and harvested up to eight times to get the perfect ripening points. Natural and indigenous fermentation in open top barriques (225l) for smaller parcels and 50hl cask or stainless steel tanks for larger plots. After 7-10 days of maceration, the parcels are moved into old barriques and 50hl casks for 20 months.

    Just love this wine, the lyricism and the generosity of it, and its always vivid depiction of fruits and stones. So juicy, so drawn out, works with the vintage, leans into its low yields, with greengages, raspberry, plum, gentle spices, lemongrass, minerality studded with mandarin peel and sage. Translucent and yet full of flavour, once again it begs you to draw up a chair, gather friends, and enjoy. What a brilliant wine and a brilliant winemaker in Bibi Graetz. From a 58ha estate, Colore comes from the oldest vineyards of Sangiovese that range up to 135 years old.

    Wild roses and wild strawberries, the nose has a lovely fragrance and expression. Lifted and bright, this has such a beautiful delicacy to it, a creamy, chalkiness comes from the fine tannins with bright, succulent strawberry and raspberry leaf elements. You feel the savoury side too, the sweet vanilla spice and dried herb aspect which counter the fruit and the high acidity. I adore the finesse here, the sharp fruit giving the energy and the chalky texture giving the layers. Feels well controlled, powerful yet delivered with poise. It doesn't have so much overt weight, it's definitely more ethereal in terms of density, but the nuance of flavour is thrillingly captivating and this has a long lifted finish. A contemplative wine that keeps you wanting more and more. Made in new winery facilities in Fiesole. Grapes were picked from the best six vineyards; Vincigliata, Olmo, Londa, Lamole, Montefili and Siena with each divided into parcels and harvested up to eight times to get the perfect ripening points. Natural and indigenous fermentation in open top barriques (225l) for smaller parcels and 50hl cask or stainless steel tanks for larger plots. After 7-10 days of maceration, the parcels are moved into old barriques and 50hl casks for 20 months.
