    About Domaine Tollot-Beaut

    Domaine Tollot-Beaut is arguably the best-known estate in Chorey-lès-Beaune; indeed the cellars sit on Rue Alexandre Tollot in the village and for many “Tollot-Beaut” and “Chorey” are practically synonymous. It is a sign of their broad appeal, excellent value and food-friendly character that these wines are seen with incredible frequency on the wine lists of Beaune’s many restaurants and brasseries.

     

    Domaine Tollot-Beaut has always been a forward-thinking domaine, and they have been estate-bottling their wines for nearly a century now. Under the guidance of the charming Nathalie Tollot, and with assistance from cousins Olivier and Jean-Paul, quality is constantly increasing year on year, with an optical sorting machine having been introduced and the oak regime refined to give a more harmonious integration in the wines.

    Vinous (90-92)

    The 2020 Savigny-lès-Beaune Les Champs Chevreys 1er Cru does not quite possess the cohesion of the Les Lavières on the nose at the moment, but there is a nice touch of reduction here that I think is masking more mineralité. The palate is medium-bodied with firm tannins. Good depth, there is more sinew compared to the Les Lavières and I suspect it will have more longevity.

    Jasper Morris Inside Burgundy (89-91)

    A notably more vibrant colour, fresh purple. This seems very youthful on the nose, not so much definition yet. The wood from this barrel is a bit more present with a dry François Frères type of toastiness. Will need a little time to settle down, but will definitely deliver. I have no qualms about giving the 2021 Champ Chevrey the benefit of the doubt. Drink from 2025-2028. Tasted: October 2022

    A crisp clear purple. The nose is a little more exuberant than Lavières, perhaps going to a slightly darker riper fruit, with happily enough acidity. Just a little more rustic in the tannins. Drink from 2027-2033. Tasted: October 2023.

    The 2018 Savigny-lès-Beaune Les Lavières 1er Cru has a perfumed nose, perhaps just missing a little definition due to the warmth of the growing season. The balanced palate offers sweet black cherries and raspberry fruit. Quite spicy on the midpalate, although it does not quite deliver the complexity of the 2016 or 2017 toward the finish. A Savigny more for early drinking.

The palate is medium-bodied with sappy red fruit. Good density here, maybe not the most tensile of the cuvées from the Domaine this vintage, but there is decent weight on the back end. Give it a couple of years in bottle.

    The 2021 Savigny-lès-Beaune Les Lavières 1er Cru has an attractive nose with light cranberry, raspberry and briary scents. There's a fine definition, if not huge intensity. The palate is medium-bodied with pliant tannins, a crisp line of acidity and a gentle grip toward the citrus-fresh finish. This works better than the Chorey-lès-Beaune.
