The richness and depth of this Chardonnay from a parcel planted in 1959 that has always been manually farmed, comes alive with a bit of time in the glass. The Vénus is such a special Champagne, as it is elusive and constantly changing in the glass as it shows a different side of its personality with each taste. An immediate nuttiness of grilled hazelnut along with freshly cut red apple peel, an edge of white pepper and melted candlewax mark the nose – very unusual. With air, this slowly verges onto baked skin of plum. That nuttiness is also apparent on the palate with a real phenolic and textural element, there is much density, almost a chewiness. Very fine acidity runs through this wine, expressing the customary Bollinger creaminess, underlined by finest foam, revealing a lovely hint of pithy bitterness, more pepper and nuances of ripeness expressed by baking spice. A most gastronomic Champagne and only at the beginning of a long trajectory.

High-pitched aromas of citrus peel, menthol, lavender and white pepper. Extremely tight without coming across as austere, conveying striking purity to its bracing flavors of grapefruit pith, lemon and crushed stone. Adamant minerality gives this very dense wine terrific inner-mouth tension and yet there's an element of leavening sweetness here as well, not to mention compelling floral perfume throughout. This wonderfully smooth, rich yet weightless wine really dances on the palate, spreading out on the unflagging back end to saturate every square millimeter of the mouth. Cellarmaster Emmanuel Hautus compared this wine to the 2009 in its combination of richness, early appeal and potential longevity.

An immediate nuttiness of grilled hazelnut along with freshly cut red apple peel, an edge of white pepper and melted candlewax mark the nose – very unusual. With air, this slowly verges onto baked skin of plum. That nuttiness is also apparent on the palate with a real phenolic and textural element, there is much density, almost a chewiness. Very fine acidity runs through this wine, expressing the customary Bollinger creaminess, underlined by finest foam, revealing a lovely hint of pithy bitterness, more pepper and nuances of ripeness expressed by baking spice. A most gastronomic Champagne and only at the beginning of a long trajectory.

(production was half of normal in 2016; aged in 30% new oak and bottled at the beginning of April of this year): Pale yellow-green. High-pitched aromas of citrus peel, menthol, lavender and white pepper. Extremely tight without coming across as austere, conveying striking purity to its bracing flavors of grapefruit pith, lemon and crushed stone. Adamant minerality gives this very dense wine terrific inner-mouth tension and yet there's an element of leavening sweetness here as well, not to mention compelling floral perfume throughout. This wonderfully smooth, rich yet weightless wine really dances on the palate, spreading out on the unflagging back end to saturate every square millimeter of the mouth. Cellarmaster Emmanuel Hautus compared this wine to the 2009 in its combination of richness, early appeal and potential longevity.

The medium-bodied palate is taut, fresh and quite saline, with a fine bead of acidity and some vanilla-y oak toward the very saline finish, though that will be eaten with bottle age. There is outstanding precision on the aftertaste, and that seems to be accentuated with aeration. I gave this a tepid reaction from barrel, but here in bottle, it received my highest score out of over two hundred 2017s. Tasted blind at the annual Burgfest tasting in Savigny-lès-Beaune.
