It's a little more delineated and focused. The palate is medium-bodied with supple tannins, again, quite creamy in texture with a bit of new oak on the finish (though there is a prudent use of new wood - one new barrel out of three). Quite seductive, this should age well in bottle, though afford it four to five years at least.

Due to the small market, the 2021 Gevrey-Chambertin 1er Cru is a blend of Poissenot, Les Cazetiers, Combe Aux Moins and Lavaux Saint-Jacques. This still amounted to just three casks! It has a well-defined, fragrant and floral bouquet that blossoms in the glass with hints of orange rind in the background. The palate is medium-bodied with a fine-boned structure. It's well-balanced and focused with a very harmonious and poised finish. Blending these vineyards together was the logical decision, but it has resulted in quite a wonderful wine.

This is powerful and blows away much of the competition with its depth and layers. This needs you to pull up a chair, take a beat, and let the flavours unroll. There is so much density to the blueberry, bilberry and smoked raspberry fruits that they start out knitted down, then as the oxygen opens them up the body of the wine widens and becomes fleshier and creamier, adding chocolate and mocha notes. The limestone scrape is there in spades through the finish, and this is a cleverly constructed wine. As ever Ausone is just a masterclass in how to take apart and then put back together a terroir. Great stuff. First year of official conversion to organic farming. 100% new oak, some in 30hl oak casks. Could go up after tasting in bottle, a potential 100 points.

One of my favorite whites in the world is the old vine Roussanne cuvée from Beaucastel, which comes from a single 3-hectare parcel just outside the domaine, in the northern, cooler part of Châteauneuf du Pape. The 2019 Châteauneuf Du Pape Roussanne Vieilles Vignes is another thrilling example of Roussanne and offers a vivid gold hue as well as gorgeous notes of white currants, honeysuckle, white flowers, crushed stone, and hints of gunpowder. With beautiful freshness, full-bodied richness, and ample power, it’s unquestionably the Montrachet of the Southern Rhône and a magical white. You can safely drink bottles anytime over the coming decade, then it’s best forgotten until around 20 years after the vintage.

Caramel, bitter lemon, orange, brioche/patisserie elements, like a buttery hot cross bun, some truffle too. Racy, piercing acidity hits the palate straight away along with such tiny, frothy bubbles that fill the mouth. The spine and tension is there, driving the wine forward with a clear vein of citrus acidity - a shot of lemon and lime, while still having the undercurrent of toasted, salty nuts. Nuanced and characterful with a hint of sweetness, sharpness and raciness all giving nuance and interest and building to an impressive whole. Well controlled with balance, construction and a gourmet feel. Made with Premier and Grand Cru grapes: Pinot Noir grapes from Mailly, Cumières, and Chigny-les-Roses, and Chardonnay grapes from Avize, Chouilly, and Vertus. Grapes are aged 12 years on their lees. An immediate nuttiness of grilled hazelnut along with freshly cut red apple peel, an edge of white pepper and melted candlewax mark the nose – very unusual. With air, this slowly verges onto baked skin of plum. That nuttiness is also apparent on the palate with a real phenolic and textural element, there is much density, almost a chewiness. Very fine acidity runs through this wine, expressing the customary Bollinger creaminess, underlined by finest foam, revealing a lovely hint of pithy bitterness, more pepper and nuances of ripeness expressed by baking spice. A most gastronomic Champagne and only at the beginning of a long trajectory.

The 2019 Châteauneuf Du Pape Roussanne Vieilles Vignes is another thrilling example of Roussanne and offers a vivid gold hue as well as gorgeous notes of white currants, honeysuckle, white flowers, crushed stone, and hints of gunpowder. With beautiful freshness, full-bodied richness, and ample power, it’s unquestionably the Montrachet of the Southern Rhône and a magical white. You can safely drink bottles anytime over the coming decade, then it’s best forgotten until around 20 years after the vintage.

Toasted hazelnuts and pecans on the nose, charry, buttery almonds, green apple so much aromatic complexity. Caramel, bitter lemon, orange, brioche/patisserie elements, like a buttery hot cross bun, some truffle too. Racy, piercing acidity hits the palate straight away along with such tiny, frothy bubbles that fill the mouth. The spine and tension is there, driving the wine forward with a clear vein of citrus acidity - a shot of lemon and lime, while still having the undercurrent of toasted, salty nuts. Nuanced and characterful with a hint of sweetness, sharpness and raciness all giving nuance and interest and building to an impressive whole. Well controlled with balance, construction and a gourmet feel. An immediate nuttiness of grilled hazelnut along with freshly cut red apple peel, an edge of white pepper and melted candlewax mark the nose – very unusual. With air, this slowly verges onto baked skin of plum. That nuttiness is also apparent on the palate with a real phenolic and textural element, there is much density, almost a chewiness. Very fine acidity runs through this wine, expressing the customary Bollinger creaminess, underlined by finest foam, revealing a lovely hint of pithy bitterness, more pepper and nuances of ripeness expressed by baking spice. A most gastronomic Champagne and only at the beginning of a long trajectory.
