Toasted hazelnuts and pecans on the nose, charry, buttery almonds, green apple so much aromatic complexity. Caramel, bitter lemon, orange, brioche/patisserie elements, like a buttery hot cross bun, some truffle too. Racy, piercing acidity hits the palate straight away along with such tiny, frothy bubbles that fill the mouth. The spine and tension is there, driving the wine forward with a clear vein of citrus acidity - a shot of lemon and lime, while still having the undercurrent of toasted, salty nuts. Nuanced and characterful with a hint of sweetness, sharpness and raciness all giving nuance and interest and building to an impressive whole. Well controlled with balance, construction and a gourmet feel. An immediate nuttiness of grilled hazelnut along with freshly cut red apple peel, an edge of white pepper and melted candlewax mark the nose – very unusual. With air, this slowly verges onto baked skin of plum. That nuttiness is also apparent on the palate with a real phenolic and textural element, there is much density, almost a chewiness. Very fine acidity runs through this wine, expressing the customary Bollinger creaminess, underlined by finest foam, revealing a lovely hint of pithy bitterness, more pepper and nuances of ripeness expressed by baking spice. The latest release of R.D. – Bollinger’s iconic ‘Recently Disgorged or Récemment Dégorgé’ wine is something completely out of the ordinary. My one-word description for this sensational wine is ‘controlled’. I say this because what I adore about every single vintage of R.D. which I have tasted (and there have been many – see below) is the seeming lack of control in every sip. R.D. should be and usually is an absurdly decadent and unpredictable wine, firing off ostentatious flavour and extraordinary detail in every direction. This is why I love it so much and also why I only open it on very special occasions! What is remarkable about this particular vintage is its restraint and levity coupled with the extraordinary length of finish. After 14 years on lees, this wine is as power-packed and energised as it could possibly be and with the extra edge and vivacity coming from a fulsome percentage of Verzenay Pinot fruit (29%) added to the usual heartbeat coming from the Aÿ Pinot core (26%) this is a dynamic red fruit-dominant cocktail. The overall blend is 70% Pinot Noir and 30% Chardonnay coming from 14 Crus with 91% Grands Crus in this vintage. The dosage is a keen 3 grams per litre and all disgorgement is done by hand, as usual. But in 2007 the result is atypical, enchanting, surprisingly refreshing and amazingly delicious. I opened this bottle at 11.00 am and did not stopper it for a full 12 hours. I even sneaked half a glass with a chicken curry at supper time and it worked like a dream. This is not a massive firework of a wine that explodes gloriously and then is gone. Instead, it is a blazing torch of flavour with phenomenal persistence and balance and this makes it unmissable in every serious Champagne lover’s cellar.

I must say that I was quite excited to taste the Champagne that everybody talked about, but no one tasted yet. A great reunion with my old friend, Rodolphe Péters whose champagne making skills are nothing less than exceptional. A ground-breaking style that blends Chardonnay from Côte de Blancs of which one part is the actual vintage, one part reserve wines and one part mature wines from bottle. The rosé part being Pinot Noir from Vertus made as a rosé de saignée blended just before bottling to keep the notion of youthful red fruity freshness. It shows a very gentle bright rosé colour and a vivid mousse with fine bubbles. The nose starts out elegantly – layered and nuanced with chalky notes, fresh hazelnut, marzipan, fresh butter, pink citrus and lemongrass. After some time in the glass the Pinot enters with aromas of crushed raspberry, cherry and pain d´épice. The palate is nicely built, showing great flavour intensity and an invigorating freshness. It´s classically bone dry (4,5 grams of dosage) with a chalky presence, balanced by a mellow creaminess. Flavours of marzipan, confit de citron and peach with layers of mature nuttiness and pastry. Elegantly built with great persistency and precision. Drinks truly well today but should certainly improve from further cellaring.

With its core of gnarled shiraz vines planted circa 1860 and its picture-perfect location alongside the Gnadenberg church, it is a much adored and discussed vineyard which has been producing stellar wines since the first single-vineyard Hill of Grace was released in 1958. The 2018 Hill of Roses Shiraz is sourced from a block within the Hill of Grace vineyard that was planted in 1989 with the intention of being a nursery bloc. The planting there is known as the Post Office Block. While the vines are, at this stage, too young to be considered for inclusion in the Hill of Grace, the wine is considered special and warranting its own bottling. Personally, I feel the young vines lend an energy and vigor to the wine, and I like the red fruited clarity that it shows each year. It matured in a combination of new (25%) and seasoned (75%) French oak hogsheads for 18 months prior to release. The nose and the palate are totally aligned: red licorice, raspberries, crushed rocks, red velvet, sage, squid ink, aniseed/anise, quartz and brine. There's the telltale black tea and minerality of the Eden on show, too. This is a sensational wine. This is texturally svelte and seamless (the nod to red velvet above is a textural observation). I love it. If ever I was going to fall for this wine, it would be here, in this clear-spoken, gracefully enunciated 2018 vintage.

It's all there, from the delineated aromatics, to the sculpted fruit, to the underlying veins of salinity that give the wine its shape. I especially admire the freshness and translucence here. Readers who can find the Ambonnay should not hesitate, as it is truly riveting. This is why I love it so much and also why I only open it on very special occasions! What is remarkable about this particular vintage is its restraint and levity coupled with the extraordinary length of finish. After 14 years on lees, this wine is as power-packed and energised as it could possibly be and with the extra edge and vivacity coming from a fulsome percentage of Verzenay Pinot fruit (29%) added to the usual heartbeat coming from the Aÿ Pinot core (26%) this is a dynamic red fruit-dominant cocktail. The overall blend is 70% Pinot Noir and 30% Chardonnay coming from 14 Crus with 91% Grands Crus in this vintage. The dosage is a keen 3 grams per litre and all disgorgement is done by hand, as usual. But in 2007 the result is atypical, enchanting, surprisingly refreshing and amazingly delicious. I opened this bottle at 11.00 am and did not stopper it for a full 12 hours. I even sneaked half a glass with a chicken curry at supper time and it worked like a dream. This is not a massive firework of a wine that explodes gloriously and then is gone. Instead, it is a blazing torch of flavour with phenomenal persistence and balance and this makes it unmissable in every serious Champagne lover’s cellar.

I must say that I was quite excited to taste the Champagne that everybody talked about, but no one tasted yet. A great reunion with my old friend, Rodolphe Péters whose champagne making skills are nothing less than exceptional. A ground-breaking style that blends Chardonnay from Côte de Blancs of which one part is the actual vintage, one part reserve wines and one part mature wines from bottle. The rosé part being Pinot Noir from Vertus made as a rosé de saignée blended just before bottling to keep the notion of youthful red fruity freshness. It shows a very gentle bright rosé colour and a vivid mousse with fine bubbles. The nose starts out elegantly – layered and nuanced with chalky notes, fresh hazelnut, marzipan, fresh butter, pink citrus and lemongrass. After some time in the glass the Pinot enters with aromas of crushed raspberry, cherry and pain d´épice. The palate is nicely built, showing great flavour intensity and an invigorating freshness. It´s classically bone dry (4,5 grams of dosage) with a chalky presence, balanced by a mellow creaminess. Flavours of marzipan, confit de citron and peach with layers of mature nuttiness and pastry. Elegantly built with great persistency and precision. Drinks truly well today but should certainly improve from further cellaring.

The 2018 Hill of Roses Shiraz is sourced from a block within the Hill of Grace vineyard that was planted in 1989 with the intention of being a nursery bloc. The planting there is known as the Post Office Block. While the vines are, at this stage, too young to be considered for inclusion in the Hill of Grace, the wine is considered special and warranting its own bottling. Personally, I feel the young vines lend an energy and vigor to the wine, and I like the red fruited clarity that it shows each year. It matured in a combination of new (25%) and seasoned (75%) French oak hogsheads for 18 months prior to release. The nose and the palate are totally aligned: red licorice, raspberries, crushed rocks, red velvet, sage, squid ink, aniseed/anise, quartz and brine. There's the telltale black tea and minerality of the Eden on show, too. This is a sensational wine. This is texturally svelte and seamless (the nod to red velvet above is a textural observation). I love it. If ever I was going to fall for this wine, it would be here, in this clear-spoken, gracefully enunciated 2018 vintage.

The NV Extra-Brut Ambonnay Le Bout du Clos (2014) is the most complex of the four lieu-dits I was able to taste. It marries power, freshness and energy. It's all there, from the delineated aromatics, to the sculpted fruit, to the underlying veins of salinity that give the wine its shape. I especially admire the freshness and translucence here. Readers who can find the Ambonnay should not hesitate, as it is truly riveting.
