Caramel, bitter lemon, orange, brioche/patisserie elements, like a buttery hot cross bun, some truffle too. Racy, piercing acidity hits the palate straight away along with such tiny, frothy bubbles that fill the mouth. The spine and tension is there, driving the wine forward with a clear vein of citrus acidity - a shot of lemon and lime, while still having the undercurrent of toasted, salty nuts. An immediate nuttiness of grilled hazelnut along with freshly cut red apple peel, an edge of white pepper and melted candlewax mark the nose – very unusual. With air, this slowly verges onto baked skin of plum. That nuttiness is also apparent on the palate with a real phenolic and textural element, there is much density, almost a chewiness. Very fine acidity runs through this wine, expressing the customary Bollinger creaminess, underlined by finest foam, revealing a lovely hint of pithy bitterness, more pepper and nuances of ripeness expressed by baking spice. A most gastronomic Champagne and only at the beginning of a long trajectory.

The latest release of R.D. – Bollinger’s iconic ‘Recently Disgorged or Récemment Dégorgé’ wine is something completely out of the ordinary. My one-word description for this sensational wine is ‘controlled’. I say this because what I adore about every single vintage of R.D. which I have tasted (and there have been many – see below) is the seeming lack of control in every sip. R.D. should be and usually is an absurdly decadent and unpredictable wine, firing off ostentatious flavour and extraordinary detail in every direction. This is why I love it so much and also why I only open it on very special occasions! What is remarkable about this particular vintage is its restraint and levity coupled with the extraordinary length of finish. After 14 years on lees, this wine is as power-packed and energised as it could possibly be and with the extra edge and vivacity coming from a fulsome percentage of Verzenay Pinot fruit (29%) added to the usual heartbeat coming from the Aÿ Pinot core (26%) this is a dynamic red fruit-dominant cocktail. The overall blend is 70% Pinot Noir and 30% Chardonnay coming from 14 Crus with 91% Grands Crus in this vintage. The dosage is a keen 3 grams per litre and all disgorgement is done by hand, as usual. But in 2007 the result is atypical, enchanting, surprisingly refreshing and amazingly delicious. I opened this bottle at 11.00 am and did not stopper it for a full 12 hours. I even sneaked half a glass with a chicken curry at supper time and it worked like a dream. This is not a massive firework of a wine that explodes gloriously and then is gone. Instead, it is a blazing torch of flavour with phenomenal persistence and balance and this makes it unmissable in every serious Champagne lover’s cellar.

Bollinger’s 2009 Vieilles Vignes Françaises is tightly wound and reserved, which is quite surprising given the warm, dry weather of the vintage. That won’t be a problem in time, of course, but readers should plan on being patient. With a few hours of air, apricot, plum, spice, dried cherry and candied orange peel start to appear, but the 2009 remains rather taut. In some years, VVF can be quite opulent, 2002 and 2010 come to mind. The 2009, on the other hand is much more vibrant. I wouldn’t plan on opening a bottle anytime soon. VVF remains one of the most compelling wines – still or sparkling – in the world. It emerges from ungrafted Pinot Noir vines in Aÿ’s Chaudes Terres and Clos St. Jacques lieu-dits and is vinified and aged in barrel. Dosage is 4 grams per liter.

The 2013 Vieilles Vignes Francaises is a powerhouse. Deep in color, the 2013 is rich and ample in feel. Apricot, spice, orange jam, cedar, dried herbs, ginger, honey and leather all meld together in a VVF that is decidedly opulent and vinous, despite the cool season and harvest that took place on September 27, late by present-day standards. Sadly, production has decreased steadily since 2008. Accumulated drought has been a challenge. Those conditions are, of course, amplified by the walls of the clos in these two parcels and the naturally warm climate of Aÿ. I find the 2013 decidedly exotic and a bit on the heavy side. Those lucky enough to own it will experience one of the most distinctive wines in all of Champagne. Production was less than 1,000 bottles.

The 2008 Extra Brut N.P.U. Nec Plus Ultra is a brilliant, taut Champagne. The combination of vintage and the extra brut style favored a Paillard that yields a young Champagne that is quite austere. I must say that I was quite excited to taste the Champagne that everybody talked about, but no one tasted yet. A great reunion with my old friend, Rodolphe Péters whose champagne making skills are nothing less than exceptional. A ground-breaking style that blends Chardonnay from Côte de Blancs of which one part is the actual vintage, one part reserve wines and one part mature wines from bottle. The rosé part being Pinot Noir from Vertus made as a rosé de saignée blended just before bottling to keep the notion of youthful red fruity freshness. It shows a very gentle bright rosé colour and a vivid mousse with fine bubbles. The nose starts out elegantly – layered and nuanced with chalky notes, fresh hazelnut, marzipan, fresh butter, pink citrus and lemongrass. After some time in the glass the Pinot enters with aromas of crushed raspberry, cherry and pain d´épice. The palate is nicely built, showing great flavour intensity and an invigorating freshness. It´s classically bone dry (4,5 grams of dosage) with a chalky presence, balanced by a mellow creaminess. Flavours of marzipan, confit de citron and peach with layers of mature nuttiness and pastry. Elegantly built with great persistency and precision. Drinks truly well today but should certainly improve from further cellaring.

Bollinger’s 2009 Vieilles Vignes Françaises is tightly wound and reserved, which is quite surprising given the warm, dry weather of the vintage. That won’t be a problem in time, of course, but readers should plan on being patient. With a few hours of air, apricot, plum, spice, dried cherry and candied orange peel start to appear, but the 2009 remains rather taut. In some years, VVF can be quite opulent, 2002 and 2010 come to mind. The 2009, on the other hand is much more vibrant. I wouldn’t plan on opening a bottle anytime soon. VVF remains one of the most compelling wines – still or sparkling – in the world. It emerges from ungrafted Pinot Noir vines in Aÿ’s Chaudes Terres and Clos St. Jacques lieu-dits and is vinified and aged in barrel. Dosage is 4 grams per liter.

The 2013 Vieilles Vignes Francaises is a powerhouse. Deep in color, the 2013 is rich and ample in feel. Apricot, spice, orange jam, cedar, dried herbs, ginger, honey and leather all meld together in a VVF that is decidedly opulent and vinous, despite the cool season and harvest that took place on September 27, late by present-day standards. Sadly, production has decreased steadily since 2008. Accumulated drought has been a challenge. Those conditions are, of course, amplified by the walls of the clos in these two parcels and the naturally warm climate of Aÿ. I find the 2013 decidedly exotic and a bit on the heavy side. Those lucky enough to own it will experience one of the most distinctive wines in all of Champagne. Production was less than 1,000 bottles.

I must say that I was quite excited to taste the Champagne that everybody talked about, but no one tasted yet. A great reunion with my old friend, Rodolphe Péters whose champagne making skills are nothing less than exceptional. A ground-breaking style that blends Chardonnay from Côte de Blancs of which one part is the actual vintage, one part reserve wines and one part mature wines from bottle. The rosé part being Pinot Noir from Vertus made as a rosé de saignée blended just before bottling to keep the notion of youthful red fruity freshness. It shows a very gentle bright rosé colour and a vivid mousse with fine bubbles. The nose starts out elegantly – layered and nuanced with chalky notes, fresh hazelnut, marzipan, fresh butter, pink citrus and lemongrass. After some time in the glass the Pinot enters with aromas of crushed raspberry, cherry and pain d´épice. The palate is nicely built, showing great flavour intensity and an invigorating freshness. It´s classically bone dry (4,5 grams of dosage) with a chalky presence, balanced by a mellow creaminess. Flavours of marzipan, confit de citron and peach with layers of mature nuttiness and pastry. Elegantly built with great persistency and precision. Drinks truly well today but should certainly improve from further cellaring.
