Not certified but made without pesticides, herbicides or chemical fertilisers. 49% Sauvignon Blanc (25-year-old vineyards), 23% Vermentino (26-year-old vineyards), 14% Grenache Blanc (25-year-old vineyards ), 12% Macabeu (62-year-old vineyards), 2% Grenache Gris, Malvoisie du Roussillon, Marsanne and Roussanne (35-year-old vineyards). Average yield 17 hl/ha. 9,800 bottles, 100 magnums and 5 jeroboams produced. Total acidity 3.54 g/l, pH 3.3, total SO2 36 mg/L. Biodynamic practices with limited ploughing (certified Demeter), bush vines (gobelet) and single-spur pruning (guyot). Hand-harvested from 3 September to 28 September. Whole-bunch pressing, cold settling, spontaneous fermentation. Aged 22 months in 60% 500-litre demi-muids, 28% new 3,000-litre oak vat and 12% tank. No fining, light filtration before bottling. Smoky, tense, almost juddering with resistance. This is a wine not even nearly ready to be opened. There is an allusion to honey and hawthorn; there is a slam of black metal and black rock. Rigid and toweringly intellectual. On day five after first being opened, the wine had turned silky, graceful (if shy) white peach and jasmine appearing on the cusp of the palate, the black rockiness turning to smooth dove-grey stream pebbles. This is a shape shifter. A quiet wine with a steely demand for patience and attention from the drinker. Buy to lay down. If you must drink it now, decant for more than a day, open a few days before if possible, serve at cellar temperature. Totally unapproachable just opened, but the future beauty of this wine lifts the hair on the back of your neck.
