This is pure, dry and very elegant Champagne expressing the chalky terroir of its origin in a very straightforward and mineral way. Ripe and cooked apples, along with raisin and flavors on the chalky-fruity nose, lead to a firmly structured Champagne with a great purity of fruit and a persistent minerality in the complex finish. However, the finish is also somewhat drying and rough from this bottle, but it gets better with aeration and should be served in glasses that are not too small.

I also tasted the very young barrel sample of the 2021 Quiñón de Valmira, a year with stress and small berries with a very mild summer that resulted in a wine with great concentration and finesse, with a pH of 3.46 and six grams of acidity (higher than the average). The wine is still a baby (six months old!), but it feels quite balanced and is not oaky at all; it is harmonious, clean and quite expressive, even if it has lots of concentration and a big structure. This is a great vintage of Valmira in the making, super balanced, perhaps the finest ever? They expect to fill some 4,300 bottles around April 2023.

Billecart-Salmon’s elite blanc de blancs is named after Louis, the brother of Elisabeth Salmon, who co-founded this illustrious Champagne house more than two centuries ago with her husband Nicolas François Billecart. The 2007 vintage is only the second release of this cuvée and it is even more sophisticated than the 2006, to which I gave a mighty 19/20 score in my notes! This wine gains a fulsome 19.5/20 score. It is made from a blend of three grands crus: Cramant, which brings pin-sharp acidity to the mix; Le Mesnil-sur-Oger, which loads structure and longevity into its frame; and Chouilly, which anchors this stunning creation into the Côtes des Blancs soil with its devastating minerality. This is a sensational wine. Billecart has augmented its oak imprint from 15% in 2006 to 50% in 2007 and yet I can barely sense the increase given that the wine is in silky, lascivious harmony. It has aged for nearly a decade on its lees and it is ready to go right now. Every time you let this wine caress your palate it does so with a discreet, but highly enjoyable pinch of drama on the back end of each sip. As I get older, I prefer to save myself for the wines that really matter, turning down all but those wines I know pass my sky-high standards. This 2007 Louis is one of only a handful of truly great Champagnes I have tasted in the last 12 months and I cannot recommend it highly enough.

The 2014 Extra Brut Blanc de Blancs Grand Cru Minéral is a powerful, intense Champagne that captures all of the natural power of these old vines in Avize and Cramant. Aptly named, the Minéral is infused with tremendous mineral and soil inflections that give a real feeling of gravitas. Crushed rocks, slate, chalk and citrus accents are some of the many nuances that emerge with a bit of time in the glass. This release is fabulous. I also tasted the very young barrel sample of the 2021 Quiñón de Valmira, a year with stress and small berries with a very mild summer that resulted in a wine with great concentration and finesse, with a pH of 3.46 and six grams of acidity (higher than the average). The wine is still a baby (six months old!), but it feels quite balanced and is not oaky at all; it is harmonious, clean and quite expressive, even if it has lots of concentration and a big structure. This is a great vintage of Valmira in the making, super balanced, perhaps the finest ever? They expect to fill some 4,300 bottles around April 2023.

It fermented with indigenous yeasts and matured for 15 months in barrels, half of them 500-liter ones and 30% of them new. It's a serious and structured red with a classical profile and terrific balance, very fine tannins and a silky mouthfeel through very fine chalky tannins. It's tasty, balanced and long, with stuffing and balance between the components to develop nicely in bottle. This shows the warm year and the hand of a very god winemaker; it is creamy and has good integrated of the oak. 34,563 bottles, 495 magnums and some larger formats produced. It was bottled in June 2021.

Billecart-Salmon’s elite blanc de blancs is named after Louis, the brother of Elisabeth Salmon, who co-founded this illustrious Champagne house more than two centuries ago with her husband Nicolas François Billecart. The 2007 vintage is only the second release of this cuvée and it is even more sophisticated than the 2006, to which I gave a mighty 19/20 score in my notes! This wine gains a fulsome 19.5/20 score. It is made from a blend of three grands crus: Cramant, which brings pin-sharp acidity to the mix; Le Mesnil-sur-Oger, which loads structure and longevity into its frame; and Chouilly, which anchors this stunning creation into the Côtes des Blancs soil with its devastating minerality. This is a sensational wine. Billecart has augmented its oak imprint from 15% in 2006 to 50% in 2007 and yet I can barely sense the increase given that the wine is in silky, lascivious harmony. It has aged for nearly a decade on its lees and it is ready to go right now. Every time you let this wine caress your palate it does so with a discreet, but highly enjoyable pinch of drama on the back end of each sip. As I get older, I prefer to save myself for the wines that really matter, turning down all but those wines I know pass my sky-high standards. This 2007 Louis is one of only a handful of truly great Champagnes I have tasted in the last 12 months and I cannot recommend it highly enough.
