The 2021 Chambertin Grand Cru offers a touch more complexity and nuance than the Clos-de-Bèze with red berry fruit, orange rind, crushed stone and wilted rose petals. It's a little more delineated and focused. The palate is medium-bodied with supple tannins, again, quite creamy in texture with a bit of new oak on the finish (though there is a prudent use of new wood - one new barrel out of three). Quite seductive, this should age well in bottle, though afford it four to five years at least.

Due to the small market, the 2021 Gevrey-Chambertin 1er Cru is a blend of Poissenot, Les Cazetiers, Combe Aux Moins and Lavaux Saint-Jacques. This still amounted to just three casks! It has a well-defined, fragrant and floral bouquet that blossoms in the glass with hints of orange rind in the background. The palate is medium-bodied with a fine-boned structure. It's well-balanced and focused with a very harmonious and poised finish. Blending these vineyards together was the logical decision, but it has resulted in quite a wonderful wine.

I also tasted the very young barrel sample of the 2021 Quiñón de Valmira, a year with stress and small berries with a very mild summer that resulted in a wine with great concentration and finesse, with a pH of 3.46 and six grams of acidity (higher than the average). The wine is still a baby (six months old!), but it feels quite balanced and is not oaky at all; it is harmonious, clean and quite expressive, even if it has lots of concentration and a big structure. This is a great vintage of Valmira in the making, super balanced, perhaps the finest ever? They expect to fill some 4,300 bottles around April 2023.

The more backward of the 2021s was the 2021 Finca Dofí, which was very primary and smelled almost like the fermentation vessels, and it took time in the glass to open up. The blend is higher in Garnacha, and they couldn't use the Picapoll as it didn't work well that cool year, so it's 90% Garnacha, 9% Cariñena and 1% white grapes. It achieved 14.5% alcohol but kept better freshness than in 2020, a constant in the 2021 wines. Very promising. They expect 24,000 bottles. It should be bottled around April 2023.

The blend of the 2021 Gratallops was higher in Cariñena than in the 2020 (25%), which resulted in a wine with a lower pH (3.37), the tendency that makes the 2021s more vibrant. They used some 40% full clusters for the fermentation (rather than adding the stems like in the past). The wine has acid berry freshness; and right now it's a bit difficult with the tannins and the acidity, but one more year of élevage should make it more polished. It should be long-lived and fresh. The expect some 17,300 bottles to be filled around April 2023.

The 2021 L'Ermita is a legend in the making, with 13.9% alcohol, the lowest ever, mind-boggling finesse and detail, purity, symmetry, elegance and great freshness that makes it vibrant with a low pH of 3.31 and 6.18 grams of acidity. These parameters should make it long-lived, and the wine is always going to be vibrant and develop citrus nose of grapefruit and orange peel. It's a powerful wine with plenty of energy, abundant tannins, even more fine and elegant than those from the 2020 I tasted next to it, and with great balance. It has a high percentage of Cariñena, much higher than the 2020, and comes down to 75% Garnacha, 24% Cariñena and 1% whites. Prices will be increased around 16%. They expect to produce some 2,800 bottles of this 2021 in April 2023.

Billecart-Salmon’s elite blanc de blancs is named after Louis, the brother of Elisabeth Salmon, who co-founded this illustrious Champagne house more than two centuries ago with her husband Nicolas François Billecart. The 2007 vintage is only the second release of this cuvée and it is even more sophisticated than the 2006, to which I gave a mighty 19/20 score in my notes! This wine gains a fulsome 19.5/20 score. It is made from a blend of three grands crus: Cramant, which brings pin-sharp acidity to the mix; Le Mesnil-sur-Oger, which loads structure and longevity into its frame; and Chouilly, which anchors this stunning creation into the Côtes des Blancs soil with its devastating minerality. This is a sensational wine. Billecart has augmented its oak imprint from 15% in 2006 to 50% in 2007 and yet I can barely sense the increase given that the wine is in silky, lascivious harmony. It has aged for nearly a decade on its lees and it is ready to go right now. Every time you let this wine caress your palate it does so with a discreet, but highly enjoyable pinch of drama on the back end of each sip. As I get older, I prefer to save myself for the wines that really matter, turning down all but those wines I know pass my sky-high standards. This 2007 Louis is one of only a handful of truly great Champagnes I have tasted in the last 12 months and I cannot recommend it highly enough.

Still a little youthful and closed, there is massive complexity here delivered in the most mesmerising sotto voce voice imaginable. I would love to see this wine in a few years but I think it will be a decade before ’07 NF fully blossoms. I am in complete awe as to how these wines are so fine and so laser-sighted in their youth. NF is a class apart.

What is remarkable about this particular vintage is its restraint and levity coupled with the extraordinary length of finish. After 14 years on lees, this wine is as power-packed and energised as it could possibly be and with the extra edge and vivacity coming from a fulsome percentage of Verzenay Pinot fruit (29%) added to the usual heartbeat coming from the Aÿ Pinot core (26%) this is a dynamic red fruit-dominant cocktail. The overall blend is 70% Pinot Noir and 30% Chardonnay coming from 14 Crus with 91% Grands Crus in this vintage. The dosage is a keen 3 grams per litre and all disgorgement is done by hand, as usual. But in 2007 the result is atypical, enchanting, surprisingly refreshing and amazingly delicious. I opened this bottle at 11.00 am and did not stopper it for a full 12 hours. I even sneaked half a glass with a chicken curry at supper time and it worked like a dream. This is not a massive firework of a wine that explodes gloriously and then is gone. Instead, it is a blazing torch of flavour with phenomenal persistence and balance and this makes it unmissable in every serious Champagne lover’s cellar.

The more backward of the 2021s was the 2021 Finca Dofí, which was very primary and smelled almost like the fermentation vessels, and it took time in the glass to open up. The blend is higher in Garnacha, and they couldn't use the Picapoll as it didn't work well that cool year, so it's 90% Garnacha, 9% Cariñena and 1% white grapes. It achieved 14.5% alcohol but kept better freshness than in 2020, a constant in the 2021 wines. Very promising. They expect 24,000 bottles. It should be bottled around April 2023.

The blend of the 2021 Gratallops was higher in Cariñena than in the 2020 (25%), which resulted in a wine with a lower pH (3.37), the tendency that makes the 2021s more vibrant. The wine has acid berry freshness; and right now it's a bit difficult with the tannins and the acidity, but one more year of élevage should make it more polished. It should be long-lived and fresh. The 2021 L'Ermita is a legend in the making, with 13.9% alcohol, the lowest ever, mind-boggling finesse and detail, purity, symmetry, elegance and great freshness that makes it vibrant with a low pH of 3.31 and 6.18 grams of acidity. These parameters should make it long-lived, and the wine is always going to be vibrant and develop citrus nose of grapefruit and orange peel. It's a powerful wine with plenty of energy, abundant tannins, even more fine and elegant than those from the 2020 I tasted next to it, and with great balance. It has a high percentage of Cariñena, much higher than the 2020, and comes down to 75% Garnacha, 24% Cariñena and 1% whites. Prices will be increased around 16%. They expect to produce some 2,800 bottles of this 2021 in April 2023.

Billecart-Salmon’s elite blanc de blancs is named after Louis, the brother of Elisabeth Salmon, who co-founded this illustrious Champagne house more than two centuries ago with her husband Nicolas François Billecart. The 2007 vintage is only the second release of this cuvée and it is even more sophisticated than the 2006, to which I gave a mighty 19/20 score in my notes! This wine gains a fulsome 19.5/20 score. It is made from a blend of three grands crus: Cramant, which brings pin-sharp acidity to the mix; Le Mesnil-sur-Oger, which loads structure and longevity into its frame; and Chouilly, which anchors this stunning creation into the Côtes des Blancs soil with its devastating minerality. This is a sensational wine. Billecart has augmented its oak imprint from 15% in 2006 to 50% in 2007 and yet I can barely sense the increase given that the wine is in silky, lascivious harmony. It has aged for nearly a decade on its lees and it is ready to go right now. Every time you let this wine caress your palate it does so with a discreet, but highly enjoyable pinch of drama on the back end of each sip. As I get older, I prefer to save myself for the wines that really matter, turning down all but those wines I know pass my sky-high standards. This 2007 Louis is one of only a handful of truly great Champagnes I have tasted in the last 12 months and I cannot recommend it highly enough.

After 14 years on lees, this wine is as power-packed and energised as it could possibly be and with the extra edge and vivacity coming from a fulsome percentage of Verzenay Pinot fruit (29%) added to the usual heartbeat coming from the Aÿ Pinot core (26%) this is a dynamic red fruit-dominant cocktail. The overall blend is 70% Pinot Noir and 30% Chardonnay coming from 14 Crus with 91% Grands Crus in this vintage. The dosage is a keen 3 grams per litre and all disgorgement is done by hand, as usual. But in 2007 the result is atypical, enchanting, surprisingly refreshing and amazingly delicious. I opened this bottle at 11.00 am and did not stopper it for a full 12 hours. I even sneaked half a glass with a chicken curry at supper time and it worked like a dream. This is not a massive firework of a wine that explodes gloriously and then is gone. Instead, it is a blazing torch of flavour with phenomenal persistence and balance and this makes it unmissable in every serious Champagne lover’s cellar.
