A carpenter’s workshop, filled with the scent of freshly sawn and planed wood. Sweet tobacco. A distinctly feral, ‘animal’ smell. Dried meadow flowers and hay. Dried orange-peel dust. Something almost lactic. It changes from sip to sip, moment to moment. First dry, then sweet. Bitter, for a second, then turning tender. Jagged edges melt silky smooth from along the slim ribbon of its structure. Demanding and volatile; then tucking charms into your palm. The intensity of the flavours – explosive bitter-sweet oranges, hit-gingered quince, cinnamon and cumin, sour cherries in Aceto Balsamico Tradizionale di Modena, decayed-wood dust – is startling, and yet the wine is fine-boned, almost ethereal. William Chester Minor, surgeon, wordsmith, schizophrenic and one of the greatest contributors to the Oxford English Dictionary, was attributed the quote, ‘Listen to the leaves scratch the air. Sometimes it sounds like gunfire. Sometimes like applause.’ I thought of those words when I tasted this wine. The 1981 Malmsey has a powerful bouquet that feels a little alcoholic and feisty at first and requires time to calm down (I gave this a couple of hours’ aeration but more would be better). The palate’s viscous texture is deftly counterbalanced by acidity. The 1988 Bual has a lot of concentration, higher alcohol (20%), a lower pH (3.4) and 115 grams of sugar, more of everything from the long aging and evaporation during that time. This has a dark mahogany color and a complex nose, with some varnish, nutty and with a touch of iodine. In general, the single-harvest wines have more edges than the blended ones. Navazos releases a super-old wine from time to time, and this time it's the turn of an Amontillado from Montilla-Moriles, produced with Pedro Ximénez grapes and sourced from the Pérez Barquero winery. It's presented as NV La Bota de Amontillado 73 “Bota Aniversario.” These old wines are always very concentrated and powerful, and the challenge here is to find one that is balanced. A similar wine was bottled as La Bota 26 to celebrate the fifth anniversary of the project, but it was never sold and instead was used for gifts for the core of Navazos customers from the bota 1. That 26 was taken from the bota 'No', and this 73, in order to not empty cask number 8 (the bota 'no'), was blended with cask number 3. Despite being bottled with some 21% alcohol, this wine is supposedly not fortified, and the alcoholic degree is achieved by pure evaporation and concentration through old age. This is getting the character of a very old wine, with hints of rusty nails and noble woods, a volatile touch and lots of nut notes.
