    Reflecting a selection of the most perfectly botrytis-inflected bunches from both young and old parcels, this delivers a drippingly luscious yet brightly refreshing meld of almond extract and honeysuckle-tinged honeydew melon and fresh lime. Hints of mint heighten a cooling and transparent impression that took me entirely by surprise given the impression leading up to it. Buoyant and silken-textured, this beauty – of which there are 4,000 liters – finishes with riveting sheer intensity and a shimmering sense of interplay among smoke and stone, melon and lime, inner-mouth florality and saliva-inducing salinity. “I picked these casks out for their having the highest acidity of any in the cellar,” explained Zilliken, “and then vinified a little differently to finish with less residual sugar than usual for an Auslese [for an Auslese of his, that is!] so that it leans more in an elegant Spätlese direction.”

The palate feel is seductively creamy, offering alluring contrast with the wine’s levity and fresh-fruitedness. The superbly sustained finish is transparent to a shimmering wealth of stony, smoky and saline nuances.

    This sole Auslese bottling of the present Zilliken collection is dominated by white peach, quince, grapefruit and lime. Like several of its siblings, it is marked by both animatingly bright citricity and creaminess of texture – though here, at least in the wine’s youthful state, the two are a bit at odds with each other. Glycerol conveys an oily feel here as well, and the citrus elements turn zesty and candied in the finish, yet all without sacrificing primary juiciness. “We had as good as no botrytis,” noted Zilliken. “We’re talking here principally about perfectly healthy grapes that were lightly desiccated.” A half-bottle with a bit left in it that had been open for two months came amazingly close in quality to freshly opened one. “I’ve been following this open bottle with some surprise myself,” observed Zilliken, adding by way of explanation that there hasn’t been any point in serving the rest of it since the wine was immediately sold out and he doesn’t want to frustrate his clientele. Here’s a bottling with which one should be patient, though I seriously doubt that it will ever deliver quite the complexity or superb balance exhibited by its two Spätlese siblings.

    This auctioned Auslese reflects a significant portion of botrytized, shriveled berries and was picked out during the last week of harvest. Quince, gooseberry and apricot preserves are mingled with glazed pineapple and candied grapefruit peel, making for an impression on both nose and palate that is at once rich, tart and piquant. Enormously high (43 grams) dry extract translates into an implacable sense of density, which is accompanied by an almost metallic sheen and a degree of brightness that may find you searching for the gustatory equivalent of sunglasses. The rapier, energetic finish left my salivary glands pumping, my gums and tongue tingling, and the sum of my mouth parts generally feeling wrung out. This formidable elixir is likely to be a long keeper, and I hope it will eventually deliver greater genuine pleasure.

The palate impression is dense and downright viscous but also seductively creamy in texture, setting up a lovely counterpoint with the fresh and zesty citricity as well as with the hint of resin and tannin from a fairly new fuder. The correspondingly multifaceted finish is vibrantly as well as lusciously persistent.

This will definitely need time but the quality is impressive for a villages-level wine.

The 2016 won't be ready to drink for at least another few years, but it is already super attractive, and also very typical of Ric Forman's style. Lavender, spice, and red cherry run through this wine made in a mid-weight, translucent style that is all class and finesse.

    The 2018 Cabernet Sauvignon is silky and elegant, with lovely aromatic presence and impeccable balance. Sweet tobacco, cedar, dried flowers and mint all give this mid-weight Cabernet lovely complexity and nuance. The 2018 has shut down since I tasted it last year, but that is not surprising given the style here. Today, bright acids give the 2018 energy, tension and a good deal of precision. Those qualities should help the 2018 Cabernet Sauvignon age well over the coming decades.

    Reflecting a selection of the most perfectly botrytis-inflected bunches from both young and old parcels, this delivers a drippingly luscious yet brightly refreshing meld of almond extract and honeysuckle-tinged honeydew melon and fresh lime. Hints of mint heighten a cooling and transparent impression that took me entirely by surprise given the impression leading up to it. Buoyant and silken-textured, this beauty – of which there are 4,000 liters – finishes with riveting sheer intensity and a shimmering sense of interplay among smoke and stone, melon and lime, inner-mouth florality and saliva-inducing salinity. “I picked these casks out for their having the highest acidity of any in the cellar,” explained Zilliken, “and then vinified a little differently to finish with less residual sugar than usual for an Auslese [for an Auslese of his, that is!] so that it leans more in an elegant Spätlese direction.”

The palate feel is seductively creamy, offering alluring contrast with the wine’s levity and fresh-fruitedness. The superbly sustained finish is transparent to a shimmering wealth of stony, smoky and saline nuances.

    This sole Auslese bottling of the present Zilliken collection is dominated by white peach, quince, grapefruit and lime. Like several of its siblings, it is marked by both animatingly bright citricity and creaminess of texture – though here, at least in the wine’s youthful state, the two are a bit at odds with each other. Glycerol conveys an oily feel here as well, and the citrus elements turn zesty and candied in the finish, yet all without sacrificing primary juiciness. “We had as good as no botrytis,” noted Zilliken. “We’re talking here principally about perfectly healthy grapes that were lightly desiccated.” A half-bottle with a bit left in it that had been open for two months came amazingly close in quality to freshly opened one. “I’ve been following this open bottle with some surprise myself,” observed Zilliken, adding by way of explanation that there hasn’t been any point in serving the rest of it since the wine was immediately sold out and he doesn’t want to frustrate his clientele. Here’s a bottling with which one should be patient, though I seriously doubt that it will ever deliver quite the complexity or superb balance exhibited by its two Spätlese siblings.

    This auctioned Auslese reflects a significant portion of botrytized, shriveled berries and was picked out during the last week of harvest. Quince, gooseberry and apricot preserves are mingled with glazed pineapple and candied grapefruit peel, making for an impression on both nose and palate that is at once rich, tart and piquant. Enormously high (43 grams) dry extract translates into an implacable sense of density, which is accompanied by an almost metallic sheen and a degree of brightness that may find you searching for the gustatory equivalent of sunglasses. The rapier, energetic finish left my salivary glands pumping, my gums and tongue tingling, and the sum of my mouth parts generally feeling wrung out. This formidable elixir is likely to be a long keeper, and I hope it will eventually deliver greater genuine pleasure.

Tangy pineapple core and bittersweet cassis contribute to the wine’s welcome animation, while the confitured orchard fruits take on a lightly caramelized edge and are joined by mango, a familiar feature from upper-Prädikat Zilliken offerings. The palate impression is dense and downright viscous but also seductively creamy in texture, setting up a lovely counterpoint with the fresh and zesty citricity as well as with the hint of resin and tannin from a fairly new fuder. The correspondingly multifaceted finish is vibrantly as well as lusciously persistent.
