In the cellar, berries are typically sorted with care before fermentation, with élevage in French oak to build aromatic complexity and polish the grand cru tannins. Expect a bouquet moving from dark cherry and plum to sous-bois, spice and subtle toast, followed by a palate of poised concentration, firm but refined grip and a long, mineral finish. Georges Noellat Clos de Vougeot Grand Cru is built for graceful development in bottle.
