Jacques Carillon
The Carillon family are a famous winemaking family who trace their roots in Puligny-Montrachet back to the c16th! Indeed, Jehan Carillon – the first winemaker in this illustrious line – was born in 1520 in Puligny.
Skipping forward quite a few generations to 1980, we find a young man called Jacques Carillon finishing his studies at the Lycée Viticole de Beaune and joining his father, Louis Carillon, on the family estate. For the next 30 years, Jacques devotes his life to wine-making and the business of running a Burgundy Domaine. Then in 2010 he and his wife Sylvia embark on the exciting project of creating their own Domaine Jacques Carillon estate.
Now we are in 2021, and the Domaine Jacques Carillon estate is 5.25ha of vines is mainly located in the village of Puligny-Montrachet. The most rigorous standards are applied in the vineyards, with a near organic methodology. No herbicides are used; the earth is turned by the plough and by hand, the vines are pruned short to control production, a severe de-budding is practised and a green harvest is practised when necessary. Harvest is always manual, a pneumatic pressoir is utilized, fermentation and élevage occur in barrel for at least one year, bâtonnage is done (judiciously!) and, before bottling, the wines are racked into stainless steel cuves for six months to settle and clarify. The dual goals are to produce age-worthy wines that are intensely expressive of their respective terroirs.
The wines of Domaine Jacques Carillon are today regarded as amongst the elite of the great white wines of Burgundy. Celebrated by critics and found on the lists of prestigious restaurants around the world, Domaine Jacques Carillon produces white wines that are racy, elegant, fruity while embodying perfectly the terroir of Chardonnay.

Wine Advocate (93)Jacques Carillon's 2016 Puligny-Montrachet 1er Cru Les Perrières is showing brilliantly from bottle, offering up a classic bouquet of crisp green apple, lemon oil and mandarin, complemented by some subtly exotic, musky top notes that lend this wine an old-fashioned feel and which weren't perceptible from barrel. On the palate, the wine is medium to full-bodied, satiny and intensely mineral, with more flesh on its bones than the Champ Canet but with a similarly incisive line of acidity, concluding with a long finish. I suspect this is likely to drink sooner than either the Champ Canet or the Referts this year. |

Vinous (90)(from a crop level of about 47 hectoliters per hectare): Pale, bright yellow. Ripe aromas of yellow peach, soft citrus fruits and spices. Rounder and riper than usual for this bottling, which is usually more taut in the early going, but without quite the concentration of Carillon's best 2016s. Aged in just 20% oak but one is aware of the wood element as there's only moderate buffering richness. Carillon believes that a rain shower in early September helped these grapes achieve maturity but may have resulted in a bit of dilution. |

Wine Advocate (90)Jacques Carillon’s 2016 Puligny-Montrachet Village is showing well from bottle, offering up notes of white peach, crisp apple, citrus zest and white flowers. On the palate, it's medium-bodied, tensile and tangy, with a crisp, chiseled profile by comparison with the more gourmand, exuberant 2017 rendition—indeed, it's much more tight-knit than it appeared before bottling. It was cropped at some 50 hectoliters per hectare and didn't suffer badly from the frosts. Its lean but concentrated format will reward some bottle age with a very classic expression of Puligny. |
