About Domaine William Fèvre
Founded and extensively developed by the eponymous William Fèvre between 1957 until his retirement in 1998, this Domaine’s wines are amongst the most sought-after and frankly exceptional in the entirety of Chablis, a region populated by more than its fair share of great labels.
A measure of the ambition and vision of the estate’s founding father, Fèvre began with a modest 7 hectares of Chardonnay vines spread across Chablis. By the time of his selling to Maison Joseph Heriot (of Champagne fame) in 1998, his eponymous Domaine was comprised of 48 hectares dotted around the very greatest Grands and 1er Crus.
The change in ownership heralded the arrival of Didier Séguier, previously of Bouchard in Beaune, a vigneron who has subsequently shepherded Domaine William Fèvre to new and breath-taking heights, building on the extraordinary work of its founder. Overseeing a continuation of practices such as pure hand-harvesting, Séguier is also working hard to shift the Domaine to fully biodynamic methods in order to extract the full potential of the exceptional terroir at his disposal. The most immediately noticeable development in these wines, however, is the reduction in new oak.
Always a controversial topic, especially in Chablis known for its crisp salinity and pure minerality, William Fèvre’s penchant for new oak drew as many detractors as ardent fans. Today, no new oak at all is used in the various cuvées, but rather Séguier utilises his former employers Bouchard as a supplier of one year old barrels to be used in a ratio of up to 80% for those Grands Crus which can take it.

William Fevre own 46ha of AP Chablis but there was lots of frost damage in 2021 - the yield was just 18hl/ha! Lovely floral notes here, very precise and focussed. This is already appealing although the acidity is certainly evident. Lingering spice notes on the finish. From a tank sample, with bottling due in November. The domaine’s holdings cover 38 ha, and the various cuvées have just been blended, and will stay on lees through to December. Pale lemon yellow. An entrancing bouquet, on the sunnier side but with a mineral undercurrent. Sherbet on the palate along with citrus, good concentration, and an evenly balanced finish. Drink from 2025-2028. Jasper Morris Inside Burgundy (90-93)
Located at the very start of Troesmes, 55 to 60 year old vines. Fine fresh lemon yellow. A clean and elegant fruit forward nose, lighter in style than most 1ers crus, hence its place in the line-up. A step up in tension, the 2023 Chablis 1er Cru Beauroy, sourced from a high-maturity site planted with 60-year-old vines, delivers notes of white flowers, pear, peach and honeysuckle. Medium- to full-bodied, ample and textural, the palate is lively and charming. (from a .55 ha parcel). Slightly honied aromas of exotic white and yellow peach are laced with moderate amounts of classic Chablis character. Interestingly, the medium-bodied flavors are not quite as dense as those of the Les Lys though they are still notably powerful while offering just a bit more depth on the sneaky long, sappy and serious finale. The 2017 Chablis Montée de Tonnerre 1er Cru shows why this site is so highly regarded. Even with all of the challenges of the growing season, all of the personality of this 1er Cru comes through loud and clear. Pale in color yet remarkably deep, the 2017 offers up a compelling mélange of citrus and orchard fruits perked up by bright acids and striking floral overtones. (5 Star wine) Clear lemon and lime colour. Just a very light coquillage reduction. Then the wine builds a beautiful level of intensity on the palate, a lime thread, very salivating for its dry finish. An impeccable balance, this is faultless. And so persistent! Assembled earlier today, so cloudy and this procedure also masks the nose. Classic Montmains behind, with the usual reductive grip, yet also some elegance, very persistent. Vinous (90-93)
(just 23 hectoliters per hectare produced): Pale yellow. A touch of mineral reduction to the aromas of apple, white peach and iodine. Silky and dense on entry, then creamy and deep in the middle, but with good saline mineral punch giving the wine an impression of thrust. The very long, bright, rising finish features a musky suggestion of quinine. With its concentration and balance, this is a superb premier cru in the making.Inc. VAT£112.79 -

A restrained Vaillons with nice balance but not quite the drive of this producer’s Montmains at the moment. With 3.65ha spread over eight plots, Fèvre is the largest owner in Vaulorent. Didier Seguier says marl soil gives the density, while Kimmeridgian supplies the minerality. Jasper Morris Inside Burgundy (92-94)
This sample represents the whole of it, but Didier may select some out to make a Fourchaumes bottling as well. 32 hl/ha overall. Fully cloudy at the moment, with an opaque white fruit on the nose, and more of the fresh pears. At the moment the class shows more in the volume on the palate, where there is real density and then a fine youthful bitterness at the end. Fèvre has 3.65ha of Vaulorent. Situated on the grand cru hill rather than the Fourchaume slope, the soils here are characterised by lots of Kimmeridgian marl.
