    About Domaine William Fèvre

    Founded and extensively developed by the eponymous William Fèvre between 1957 until his retirement in 1998, this Domaine’s wines are amongst the most sought-after and frankly exceptional in the entirety of Chablis, a region populated by more than its fair share of great labels.

    A measure of the ambition and vision of the estate’s founding father, Fèvre began with a modest 7 hectares of Chardonnay vines spread across Chablis. By the time of his selling to Maison Joseph Heriot (of Champagne fame) in 1998, his eponymous Domaine was comprised of 48 hectares dotted around the very greatest Grands and 1er Crus.

    The change in ownership heralded the arrival of Didier Séguier, previously of Bouchard in Beaune, a vigneron who has subsequently shepherded Domaine William Fèvre to new and breath-taking heights, building on the extraordinary work of its founder. Overseeing a continuation of practices such as pure hand-harvesting, Séguier is also working hard to shift the Domaine to fully biodynamic methods in order to extract the full potential of the exceptional terroir at his disposal. The most immediately noticeable development in these wines, however, is the reduction in new oak.

    Always a controversial topic, especially in Chablis known for its crisp salinity and pure minerality, William Fèvre’s penchant for new oak drew as many detractors as ardent fans. Today, no new oak at all is used in the various cuvées, but rather Séguier utilises his former employers Bouchard as a supplier of one year old barrels to be used in a ratio of up to 80% for those Grands Crus which can take it.

    (from a .55 ha parcel). Slightly honied aromas of exotic white and yellow peach are laced with moderate amounts of classic Chablis character. Interestingly, the medium-bodied flavors are not quite as dense as those of the Les Lys though they are still notably powerful while offering just a bit more depth on the sneaky long, sappy and serious finale. At least some patience will be necessary. 2026+

    Pale yellow. Wonderfully pure, subtle nose offers mandarin orange, grapefruit, lemon and powdered stone. At once fat and vibrant, entering the mouth with huge volume but conveying an impression of weightlessness. Large-scaled, pliant wine that's consistent from start to extremely long finish. This is a level beyond the other Fevre grand crus in 2007, which is high praise indeed.

    Here the wood influence is somewhat more noticeable though not enough to materially detract from the otherwise pure, cool and high-toned white flower, stone and sea breeze suffused aromas that complement well the rich, powerful and intensely mineral-driven flavors that possess fine focus and verve on the explosively long and oyster shell-infused finish. This is seriously impressive in absolute terms but especially so in the context of the vintage.

    (from a crop level below 35 hectoliters per hectare, according to Didier Seguier): Very pale green-yellow color. Pretty, high-pitched aromas of lime, white flowers and crushed stone minerality. Then quite rich, dense and powerful in the mouth, but with a light touch to the explosive flavors of citrus fruits and minerals. Best today on the mounting, dry, uncompromising finish, which dusts the mouth with minerality and returns with a whiplash of flavor. Time-capsule Clos in the making.

This is a brilliant expression of the Grand Cru, marrying power and intensity with focus, balance and palate length. Stylishly oaked, with the concentration to age, it's a textbook white, showing white pepper and citrus flavours and notes of kelp and oyster shell.

    The 2019 Chablis Grand Cru Les Clos has turned out brilliantly, mingling aromas of orange oil, confit citrus and crisp green apple with notes of warm bread, white flowers, oyster shell and anise in an incipiently complex bouquet. Full-bodied, layered and muscular, it's concentrated and tightly wound, with broad shoulders and huge depth at the core, concluding with a long, electric finish. It was cropped at 25 hectoliters per hectare.

    William's father planted these vines in 1947, 1948, 1950 and 1952. All are in the upper part of Les Clos. Their positioning simultaneously offers freshness and power. Yellow cherries, yellow tomatoes and summer herbs deliver a bold palate. It's a tsunami of flavor, and the structure is equally dominating. Give this time to harmonize further though it wouldn't disappoint if you sipped it now. 2026-45

    The 2013 Chablis Les Preuses isn't fully formed at this stage. Sweet, floral aromatics lift from the glass, but the mid-palate needs more time to fully flesh out. The Preuses was the first wine to finish its malo, and it is now in a different stage from the rest of the wines in this range, as it has begun to shut down. I very much like the pulsating acidity and energy here, but the Preuses is a bit hard to fully gauge today.

The racy, intense and painfully intense larger-scaled flavors possess cuts-like-a-knife delineation on the bone dry and super-saline finish where a distinct bitter lemon quality slowly emerges. This is very classy juice and also built-to-age. 2031+

    (vinified entirely in oak, then moved into cuve in January; just 24 hectoliters per hectare produced): Pale, slightly hazy yellow. Very ripe but discreet nose hints at spices, anise and lichee. Glyceral and rich, but with surprising citrussy acidity to shape the exotic fruit and lichee flavors. A powerful, dense yet silky wine from marl soil, this was picked at close to 13% potential alcohol. Finishes with an impression of solidity but this is hard to taste today.

Citrus, floral and savory notes open up in the glass, but only with great reluctance; this powerful, concentrated Chablis demands time.

    (from a 1.1 ha parcel of vines that is close to Vaudésir and extends all the way from Grenouilles to the tree line at the top of the hill). Much like the Vaulorent, the nose instantly confirms with conviction that this could be from nowhere else but Chablis with its airy array of citrus rind, sea breeze, quinine and green fruit aromas. There is excellent size, weight and richness to the broad-shouldered yet sleek flavors if not nearly the same refinement on the powerful and driving finish. This even more firmly structured effort is impressive as well though with an entirely different texture. (92-95)/2032+

    Pale, bright yellow. Quite closed on the nose, hinting at pineapple, menthol and wet stone. Dense and smooth on the palate but extremely unforthcoming today, displaying dry, slightly reduced flavors of lemon drop and crushed stone. This sharply chiseled, mineral-driven wine boasts terrific structure for a graceful evolution in the bottle. Owing to its austerity, salinity and inner-mouth tension, it's more about Vaudésir than it is about the 2015 vintage.

Interestingly, the medium-bodied flavors are not quite as dense as those of the Les Lys though they are still notably powerful while offering just a bit more depth on the sneaky long, sappy and serious finale.     Pale yellow. Wonderfully pure, subtle nose offers mandarin orange, grapefruit, lemon and powdered stone. At once fat and vibrant, entering the mouth with huge volume but conveying an impression of weightlessness. Large-scaled, pliant wine that's consistent from start to extremely long finish. This is a level beyond the other Fevre grand crus in 2007, which is high praise indeed.

This is seriously impressive in absolute terms but especially so in the context of the vintage.

Then quite rich, dense and powerful in the mouth, but with a light touch to the explosive flavors of citrus fruits and minerals. Best today on the mounting, dry, uncompromising finish, which dusts the mouth with minerality and returns with a whiplash of flavor. Time-capsule Clos in the making.

Stylishly oaked, with the concentration to age, it's a textbook white, showing white pepper and citrus flavours and notes of kelp and oyster shell.

Full-bodied, layered and muscular, it's concentrated and tightly wound, with broad shoulders and huge depth at the core, concluding with a long, electric finish. It was cropped at 25 hectoliters per hectare.

    William's father planted these vines in 1947, 1948, 1950 and 1952. All are in the upper part of Les Clos. Their positioning simultaneously offers freshness and power. Yellow cherries, yellow tomatoes and summer herbs deliver a bold palate. It's a tsunami of flavor, and the structure is equally dominating. Give this time to harmonize further though it wouldn't disappoint if you sipped it now. 2026-45

    The 2013 Chablis Les Preuses isn't fully formed at this stage. Sweet, floral aromatics lift from the glass, but the mid-palate needs more time to fully flesh out. The Preuses was the first wine to finish its malo, and it is now in a different stage from the rest of the wines in this range, as it has begun to shut down. I very much like the pulsating acidity and energy here, but the Preuses is a bit hard to fully gauge today.

    (vinified entirely in oak, then moved into cuve in January; just 24 hectoliters per hectare produced): Pale, slightly hazy yellow. Very ripe but discreet nose hints at spices, anise and lichee. Glyceral and rich, but with surprising citrussy acidity to shape the exotic fruit and lichee flavors. A powerful, dense yet silky wine from marl soil, this was picked at close to 13% potential alcohol. Finishes with an impression of solidity but this is hard to taste today.

    (from a 1.1 ha parcel of vines that is close to Vaudésir and extends all the way from Grenouilles to the tree line at the top of the hill). Much like the Vaulorent, the nose instantly confirms with conviction that this could be from nowhere else but Chablis with its airy array of citrus rind, sea breeze, quinine and green fruit aromas. There is excellent size, weight and richness to the broad-shouldered yet sleek flavors if not nearly the same refinement on the powerful and driving finish. This even more firmly structured effort is impressive as well though with an entirely different texture. (92-95)/2032+

    Pale, bright yellow. Quite closed on the nose, hinting at pineapple, menthol and wet stone. Dense and smooth on the palate but extremely unforthcoming today, displaying dry, slightly reduced flavors of lemon drop and crushed stone. This sharply chiseled, mineral-driven wine boasts terrific structure for a graceful evolution in the bottle. Owing to its austerity, salinity and inner-mouth tension, it's more about Vaudésir than it is about the 2015 vintage.
