About Domaine William Fèvre

Founded by William Fèvre in 1957, Domaine William Fevre has become one of the most prestigious in Chablis. The domaine grew from a modest 7 hectares to the 78-hectare giant today. Fèvre was a staunch campaigner for the Chablis appellation, strongly objecting to the extension of appellation boundaries and the use of the name “Chablis” for wines produced outside the region. The domaine was acquired by Champagne Henriot in 1998 and still remains one of the stalwarts of Chablis that stands for both quality and consistency.

 

it is a regional standard of consistency, quality and style; making fresh, wines which stand alongside the regions finest. Over a third of the William Fevre vineyards are classified as either 1er or Grand Cru and the winemaking team's dedication to terroir allows them to showcase their exceptional potential.

Interestingly, the medium-bodied flavors are not quite as dense as those of the Les Lys though they are still notably powerful while offering just a bit more depth on the sneaky long, sappy and serious finale. At least some patience will be necessary. 2026+

The 2018 Chablis Montée de Tonnerre 1er Cru is very tight, but it was also racked just prior to this tasting, and Montée de Tonnerre is naturally a site that yields intensely mineral wines. Bright citrus, mint, chalk and white pepper open up gradually in a brisk, focused wine that needs time to show at its best. The Fèvre Montée de Tonnerre is a blend of three climats: Pied d'Aloup (east-facing), Chapelot (south-facing) and Côte de Bréchain (west-facing, vines planted in 1936).

An admirably pure, airy and decidedly cool nose features notes of acacia, citrus zest and mineral reduction. The wonderfully refined, chalky and stony medium weight flavors possess really lovely underlying tension and fine detail while delivering excellent length where the only nit is a touch of warmth. This too will need to add depth, but the quality of the underlying material appears up to the task. 2025+

Sold at a higher price than the domaine's straight Fourchaume because it's 'more profound', according to Didier Séguier, this comes from a Premier Cru that often makes wines of Grand Cru quality. Subtly wooded, with mouthwatering salinity, this shows the dry extract and concentration that are features of the vintage complemented by creamy, pillowy lees.

I was unduly conservative with my assessment of Fèvre's 2017 Chablis Grand Cru Bougros, as this bottle was showing very well indeed, unfurling in the glass with aromas of white flowers, fresh peach, Meyer lemon and crushed chalk. It's full-bodied, deep and fleshy, with excellent concentration, racy acids and chalky structuring extract, concluding with a precise finish. While this Bougros is still quite demonstrative, it is showing more complexity and tension after another six months in bottle and is well worth seeking out.

The 2018 Chablis Bougros Grand Cru is gorgeous. Lifted and precise, with lovely underpinnings of minerality, the 2018 has so much to offer. Bright floral and citrus notes give the 2018 lift, perfume and nuance to match its mid-weight personality. This is a very pretty and gracious Chablis, especially considering the general style of the year.

This is perennially one of my favorite wines and one that I buy virtually every vintage. The 2013 version displays a deft touch of oak that again is sufficiently subtle as to allow the ripe and very fresh white and yellow orchard fruit, sea breeze and iodine scents to shine. There is excellent punch as well as fine detail to the almost aggressively mineral-driven flavors that possess good power but also a lovely sense of refinement on the wonderfully long and impeccably well-balanced finish. Exquisite.

The Fèvre holdings in Les Clos are the envy of Chablis - seven parcels (five of them high on the slope) covering 4.14ha, with more than half over 60 years' old. This is a brilliant expression of the Grand Cru, marrying power and intensity with focus, balance and palate length. Stylishly oaked, with the concentration to age, it's a textbook white, showing white pepper and citrus flavours and notes of kelp and oyster shell.

(from 4 separate parcels totaling 4.11 ha, 3 of which are all at the top of the slope). Once again, the nose is both fresh and ripe and while it’s not quite as elegant and airy as the Côte Bouguerots there is every bit as much classic Chablis character along with a hint of honey. There is a really lovely mouthfeel to the sappy large-bodied flavors thanks to the copious quantity of dry extract that also serves to buffer the firm acid spine on the powerful, punchy and beautifully persistent finale. Like several of the wines in the range, this would benefit substantially from developing more depth though it should be able to do just that over time. 2029+

Perfectly integrated and balanced from the start. The impressively long, rising finish features piquant notes of citrus peel, minerals and flowers. I'd give this fine-grained beauty a good five years in the cellar before pulling the cork.

This too could be from nowhere else except Chablis with its citrus-tinged aromas of tidal pool, white flowers and shellfish. The racy, intense and painfully intense larger-scaled flavors possess cuts-like-a-knife delineation on the bone dry and super-saline finish where a distinct bitter lemon quality slowly emerges. This is very classy juice and also built-to-age. 2031+

Thick on entry, then smooth and vibrant in the middle, with impressive volume to the intense white peach and mint flavors. A bit less powerful on the attack than the Vaudesir but broader and finer-grained. The long, building finish is dense and tactile.

The 2013 Chablis Grand Cru Valmur has a sultry, quite backward bouquet at the moment: touches of wet earth, citrus peel and granite that all need a little more intensity. The palate is fresh and crisp on the entry, saline in the mouth with a twist of sour lemon, although the mineral finish just lacks a little persistence at the moment. I would give this another couple of years in the cellar as the tension is commendable.

A classic Chablis nose features notes of pear, green apple, iodine and sea breeze. The dense, serious and overtly powerful big-bodied flavors flash a sleek muscularity on the textured, sappy and youthfully austere finish that exhibits outstandingly length. This bad boy of a Valmur won’t win any awards for refinement but it is beautifully constructed and clearly built-to-age for a very long time. 2031+

The palate is fresh in the mouth with fresh pear and nettle notes, good acidity, but missing just a little complexity toward the agreeably saline finish. Drink this before the succeeding vintage.

Sold at a higher price than the domaine's straight Fourchaume because it's 'more profound', according to Didier Séguier, this comes from a Premier Cru that often makes wines of Grand Cru quality. I was unduly conservative with my assessment of Fèvre's 2017 Chablis Grand Cru Bougros, as this bottle was showing very well indeed, unfurling in the glass with aromas of white flowers, fresh peach, Meyer lemon and crushed chalk. It's full-bodied, deep and fleshy, with excellent concentration, racy acids and chalky structuring extract, concluding with a precise finish. While this Bougros is still quite demonstrative, it is showing more complexity and tension after another six months in bottle and is well worth seeking out.

This is a very pretty and gracious Chablis, especially considering the general style of the year.

This is perennially one of my favorite wines and one that I buy virtually every vintage. The 2013 version displays a deft touch of oak that again is sufficiently subtle as to allow the ripe and very fresh white and yellow orchard fruit, sea breeze and iodine scents to shine. There is excellent punch as well as fine detail to the almost aggressively mineral-driven flavors that possess good power but also a lovely sense of refinement on the wonderfully long and impeccably well-balanced finish. Exquisite.

The Fèvre holdings in Les Clos are the envy of Chablis - seven parcels (five of them high on the slope) covering 4.14ha, with more than half over 60 years' old. This is a brilliant expression of the Grand Cru, marrying power and intensity with focus, balance and palate length. Stylishly oaked, with the concentration to age, it's a textbook white, showing white pepper and citrus flavours and notes of kelp and oyster shell.

Once again, the nose is both fresh and ripe and while it’s not quite as elegant and airy as the Côte Bouguerots there is every bit as much classic Chablis character along with a hint of honey. There is a really lovely mouthfeel to the sappy large-bodied flavors thanks to the copious quantity of dry extract that also serves to buffer the firm acid spine on the powerful, punchy and beautifully persistent finale. Like several of the wines in the range, this would benefit substantially from developing more depth though it should be able to do just that over time. 2029+

I would give this another couple of years in the cellar as the tension is commendable.
