A blend of 65% Cabernet Franc and 35% Merlot, the 2021 Ausone is a strong candidate for the title of wine of the vintage. Wafting from the glass with aromas of wild blueberries and raspberries mingled with rose petals, violets, exotic spices, vine smoke and blood orange, it's full-bodied, seamless and sensual, with a satiny attack that segues into a deep, layered mid-palate of breathtaking precision and intensity without weight. Built around bright acids and ultra-refined tannins and concluding with a resonant, perfumed finish, this profound young Ausone represents the essence of this great limestone terroir. I am not in the habit of drinking six-month-old Bordeaux cask samples, but this is one wine that would have sorely tempted me to make an exception to that rule if my appointment at the estate hadn't been one of the first of the day!Inc. The latest release of R.D. – Bollinger’s iconic ‘Recently Disgorged or Récemment Dégorgé’ wine is something completely out of the ordinary. My one-word description for this sensational wine is ‘controlled’. I say this because what I adore about every single vintage of R.D. which I have tasted (and there have been many – see below) is the seeming lack of control in every sip. R.D. should be and usually is an absurdly decadent and unpredictable wine, firing off ostentatious flavour and extraordinary detail in every direction. This is why I love it so much and also why I only open it on very special occasions! What is remarkable about this particular vintage is its restraint and levity coupled with the extraordinary length of finish. After 14 years on lees, this wine is as power-packed and energised as it could possibly be and with the extra edge and vivacity coming from a fulsome percentage of Verzenay Pinot fruit (29%) added to the usual heartbeat coming from the Aÿ Pinot core (26%) this is a dynamic red fruit-dominant cocktail. The overall blend is 70% Pinot Noir and 30% Chardonnay coming from 14 Crus with 91% Grands Crus in this vintage. The dosage is a keen 3 grams per litre and all disgorgement is done by hand, as usual. But in 2007 the result is atypical, enchanting, surprisingly refreshing and amazingly delicious. I opened this bottle at 11.00 am and did not stopper it for a full 12 hours. I even sneaked half a glass with a chicken curry at supper time and it worked like a dream. This is not a massive firework of a wine that explodes gloriously and then is gone. Instead, it is a blazing torch of flavour with phenomenal persistence and balance and this makes it unmissable in every serious Champagne lover’s cellar.Inc. VAT£1,039.24 -

Aromas of green and yellow fruit mix it with flinty minerality. The palate shows a little more fruit than the straight Marienburg, grapefruit with peel and pith, but without any tropical aspirations. Nuances of salt and quinine give an almost medicinal tang, but a generous texture makes the medicine go down without any resistance. Very cool, the essence of mineral Riesling.Inc. VAT£308.44 -

The phenomenal 2010 Reserva is produced with 90% Tempranillo, 5% Graciano and some 5% of the skins of Malvasía and Viura grapes used for the white wine after it finished fermenting. Here, they select the grapes from some of their best and oldest vineyards, put them in cold storage for 24 hours and then exclusively select the grapes from the top half of the bunches. It fermented in 7,000-liter oak vats and small stainless steel tanks followed by malolactic and 25 months aging in new French barriques. This is a vintage that deserves to be laid down in the cellar, as it has all the components and the balance to develop into a superb classical Rioja with a few more years in bottle. Everything seems to be in its place, and all components show high quality: the tannins, the acidity, the oak, the fruit... Highly recommended. One for the cellar. 72,000 bottles produced. The 2017 Tenuta San Guido Sassicaia is such an impressive wine in a hot and very dry vintage like 2017. It has a wonderful fragrance of sweet spice, pressed flowers and Mediterranean herbs with youthful, bright blackberries and forest floor notes. A problem with the 2017 vintage was that the nights were hot as well as the days so it was challenging to accumulate aromatics and achieve full phenolic ripeness. Paoli and his team had to harvest early and shorten maceration times. In any case they have done an excellent job. It has lovely concentration and power on the palate yet it still retains the classic Sassicaia signature of vibrant acidity and harmony and flow across the palate.Inc. VAT£1,267.24 -

Full, dark, deep ruby-red colour with purple-black hues, near impenetrable. The nose has incredibly intense and penetrating aromas of ripe blackberry fruit with subtle dark raspberry and blue fruit notes, lifted by an array of red, violet and black florals, melded with fine spice elements and a suggestion of black pepper. The aromatic components are seamlessly interwoven and harmonious in presentation. Medium-full bodied, the palate is richly sweet and succulent with ripe, vibrant and lively fruit flavours of blackberries entwined with dark-red and blue fruit notes, along with dark-red, violet and black florals, melded with notes of liquorice, spice and black pepper forming a complex amalgam. The fruit is fine and beautifully concentrated with intensity and depth, the lusciousness balanced by considerable extraction, the tannins very fine-grained and flowery in texture. The acidity is ripe, and softly integrated, and the wine carries with great linearity and drive to a long and sustained finish of black fruits, florals and spices. This Syrah has a remarkably intense and perfumed nose with a beautiful array of floral aromatics, on a rich, succulently sweet black, red and blue fruited palate with considerable, but refined extraction.Inc.
