Nevertheless, the stand out feature on the palate is undoubtedly the textural sophistication, harmony and chalky minerality combined with super tangy acids bursting with lemon rock candy, white peach and crystalline citrus flavours. Simply an incredible intensity with a harmoniously weightless balance combined with a long, piercing finish. The 2016 Eclipse is 87% Grenache, 8% Graciano and 5% Shiraz, all off the McLaren Vale estate vineyard. It's full-bodied, with assertive but silky tannins that should help preserve the wine's freshness as it ages. The 2005 Shiraz Reserve was sourced from a 45-year-old vineyard and aged for 18 months in American and French oak of various sizes. A saturated purple color, it presents an array of otherworldly scents including smoke, mineral, meat, game, bacon, and blueberry. Thick, rich, and voluptuous, this mouth-filling, full-bodied Shiraz is about as hedonistic as it gets. Although the wine is seamless, there is some tannin lurking under all the fruit which will permit 8-10 years of cellaring for those able to delay gratification. The bouquet is reserved and understated, with more earthy, savoury aromas coming first followed by cassisy cabernet-like nuances, the palate more elegant than expected with lovely purity of concentrated blackberry, blackcurrant cabernet fruit skilfully welded to neatly integrated oak characters. So integrated. The palate has a very silky texture, so plush and polished with a wealth of rich and intense dark-plum, dark-berry and blackcurrant flavors. Drawn from McLaren Vale, Barossa Valley and Padthaway, this is nothing short of an awesome Bin 389 and the Cabernet fruit that would have made it into both Bin 707 and Bin 169 had it been imperceptibly finer is shining like a beacon in this wine. The glorious flavours are so perfect and balanced, and there is spectacular refinement here. I have long since stopped looking for the weld between these two noble red grapes in this legendary The Great Australian Red blend because it is second nature for these two varieties to fuse perfectly in this wine.Inc. Drawn from McLaren Vale, Barossa Valley, Coonawarra, Padthaway and Wrattonbully, this is a seriously focussed and complete Bin 407 with impressive length, and it manages to retain control to the very end. There was no Bin 169 or Bin 707 made in 2020, so this wine (and Bin 389 below) has scooped up the very best Cabernet from the estate, and there is no doubt it is a very special creature indeed. Delicious and savoury, the tannins pinch the palate, and it remains reassuringly dry and firm while on the finish, allowing the palate to open up beautifully on the nose. Sourced from Coonawarra, Padthaway, Barossa Valley, Wrattonbully and the Adelaide Hills; the fermentation is completed in new American oak hogsheads, whereafter it is matured in those hogsheads for 14 months. There is amazing depth to the purple-crimson colour. Its full-bodied colours are nailed to the mast immediately the wine enters the mouth; it’s strange how the cabernet of this wine marries with the American oak, providing the ultimate Christmas cake of aromas and flavours; one of its great strengths is the tannin structure that gives the wine its exceptional length (and mouthfeel along the way).Inc. Full-bodied, concentrated and rich, this wine looks to have at least two decades ahead of it. Drawn from McLaren Vale, Barossa Valley, Coonawarra, Padthaway and Wrattonbully, this is a seriously focussed and complete Bin 407 with impressive length, and it manages to retain control to the very end. There was no Bin 169 or Bin 707 made in 2020, so this wine (and Bin 389 below) has scooped up the very best Cabernet from the estate, and there is no doubt it is a very special creature indeed. Delicious and savoury, the tannins pinch the palate, and it remains reassuringly dry and firm while on the finish, allowing the palate to open up beautifully on the nose. Sourced from McLaren Vale (41%), Coonawarra, Barossa Valley and Padthaway this vintage, the 2019 Cabernet Sauvignon Bin 707 spent 18 months in 100% new American oak hogsheads prior to bottling. Scents of vanilla, cedar and celery seed seamlessly swirl around dark notions of cassis, plum, coffee and cocoa. There's a touch of mint, but it fits well within the context of the wine. Full-bodied, concentrated and rich, this wine looks to have at least two decades ahead of it.
