Raised entirely in stainless steel, the 2016 Saint-Véran was showing very well, wafting from the glass with notes of lemon oil, honeysuckle and pastry cream. On the palate, it's medium to full-bodied, concentrated and powerful, with succulent underlying acidity, concluding with a stony, saline finish. The 2018 Saint-Véran is a blend of vineyards that expanded with the acquisition of additional vines in 2016. It has a crisp, stony, surprisingly reserved bouquet with touches of gravel and flint. Moving to the smaller production cuvées, the Syrah-dominated 2019 Ventoux Quintessence reveals a deeper ruby/plum color followed by a beautiful bouquet of smoked red and black fruits, gamey herbs, spring flowers, and an almost forest floor-like character. With considerable elegance on the palate, medium to full-bodied richness, and silky yet building tannins, this is straight-up classy stuff. An intricately layered nose freely offers up its combination of ripe white and yellow orchard fruit, especially peach, and less floral but spicier aromas. The rich, textured and vibrant flavors possess very fine mid-palate density that brims with dry extract on the sappy finish that is supported by lemon-tinged acidity.
