The palate is very well balanced with a fine bead of acidity, very saline in the mouth, hints of bitter lemon and a dab of spice, very persistent on the finish. These vines were harvested on August 30, said enologist Julien Desplans, who believes that this wine will evolve in bottle for at least 12 years.
