We are pleased to have secured a number of 2021s in a year when many distillers are severely cutting their allocations of casks to the market and it is a particular coup's barrels specially selected for us; bourbon-sized barrels previously used for top-grade Oloroso sherry giving a smaller surface area than ex-sherry hogsheads, butts or puncheons. Therefore the whisky will develop relatively quickly, rewarding the years more profoundly than lower-quality, lower-cost refill barrels.

The peat is fine-grained, much more clearly highland peat than Islay or Coastal as it foregoes the iodine and TCP or boat oil, more reminiscent of an autumn bonfire somewhere in the distance. This is presently a block of stone that is going to need at least some patience and a wine that should repay 15+ years of cellaring. Moreover, it is not only a candidate for wine of the vintage honors but could legitimately vie for being one of the all-time great examples of Raveneau Clos. This would be difficult to mistake for anything other than Chablis with its aromatic profile of oyster shell, iodine, citrus and acacia blossom, all trimmed in a delicate dollop of oak. Based in the small village of Ballindaloch on the banks of the River Spey, situated a stones throw from Glenfarclas, Tomintoul is a modern classic. Known popularly as "the gentle dram with a peaty tang" it breaks with fellow Speysiders by introducing a hint of peat smoke to their distillery's flavour profile.
Less heavily peated than the likes of Ardmore, Tomintoul has begun to gradually build up its reputation around the world and though it can still be considered an insider's secret, a number of independent bottlings from Gordon & MacPhail, Signatory and Douglas Laing have raised the distillery's profile among the cognoscenti and an increased and much improved distillery-bottled range have paved the way for a very bright future for the brand indeed.

At 7 years of age but with regauged numbers from April 2021 reminiscent of a newly filled cask, this is a superb long term offering that has excellent upside for the 5-year term bringing it to 12 years old. William Fevre own 46ha of AP Chablis but there was lots of frost damage in 2021 - the yield was just 18hl/ha! Lovely floral notes here, very precise and focussed. This is already appealing although the acidity is certainly evident. Lingering spice notes on the finish. From a tank sample, with bottling due in November. Burghound (91-93)
(from a .55 ha parcel). Slightly honied aromas of exotic white and yellow peach are laced with moderate amounts of classic Chablis character. Interestingly, the medium-bodied flavors are not quite as dense as those of the Les Lys though they are still notably powerful while offering just a bit more depth on the sneaky long, sappy and serious finale. Jancis Robinson (17)
Very creamy on the nose, marked by the lees and gentle oak. Fresh citrus and almost something floral, like blossom, as well as stony/mineral character. Rich, deep and lively. Generous with a good acid backbone, even if it is a little softer than the Vaillons. (JH)In Bond£248.00 -

Fèvre has three parcels in Montée de Tonnerre (its purest, most mineral premier cru): Chapelot, Pied d'Aloup and Côte de Bréchain, all facing different ways. Very precise, crystalline fruits, salinity, great acidity and a long, long finish. Will age beautifully, but great now.In Bond£324.00
