Fullish yellow. The complex nose shows the power of the vintage, a few drier tannins behind, fair acidity. I think the Clos character is there, but it is reticent today. Moutonne is one of Chablis' finest expressions and the 2019 will be another in a long list of memorable vintages. Although not the final bottling, it is clear that there is great power here, combined with finesse and a lightness on its feet. Savoury, umami, notes on the finish. The 2020 Saint-Aubin En Remilly 1er Cru has a fresh, vivacious nose with wet limestone scents filtering through the green apple and citrus aromas. The palate is very well balanced, linear and Puligny-like, and quite strict and penetrating, leading to a citrus-fresh finish. I can just imagine this with some fresh oysters! Very fine.Inc. The 2018 Chablis Vaillons 1er Cru, blended from six parcels, is pure, focused and taut, all while expressing the natural richness of the year. The Vaillons has a surprising amount of freshness and lift, with bright saline notes that extend the finish. This is from the excellent Pargues vineyard, vinified and aged in stainless steel. Pale colour. The bouquet has a Chablisian crispness but also the juiciness of this 2022 vintage.
