A floral quality echoes on the long, spicy finish. Given the quality of their fruit, it is understandable why Huet concentrates on this purer kind of sparkling wine rather than the more widespread Champagne method, which masks the flaws of most overcropped chenin blancs harvested by machine in Vouvray.Inc.
