Bottled in February 2021 (no, that isn't a typo), Defaix's 2009 Chablis 1er Cru Côte de Léchet wafts from the glass with aromas of honeycomb, golden orchard fruit, apricot, spices and dried white flowers. Medium to full-bodied, broad and satiny, it's a lively, saline wine that concludes with a delicately nutty finish.

(15% alcohol; 52% Cabernet Sauvignon, 31% Merlot, 14% Shiraz and 3% Cabernet Franc; aged in 100% new French oak): Full ruby-red. Lively aromas of dark plum, currant, coffee and mocha complicated by an herbal/peppery aspect and a note of menthol. Suave and smooth in the mouth, with currant, plum and spice flavors complicated by subtle hints of underbrush, truffle and menthol. Conveys a lovely impression of slow ripening. This plush, full, satisfying Cabernet finishes with big but ripe tannins and subtle persistence, and without obvious heat.

(15.3% alcohol; aged for 18 months in 35% new French oak): Good dark red. Musky, slightly wild, almost Syrah-like nose hints at mocha, woodsmoke and pepper. Very smooth and very dry, offering subtle red berry, woodsmoke and pepper flavors. A bit too woodsmoky for my taste but there's no denying the wine's silky middle palate. A serious dusting of tannins currently cuts off the fruit of this savory Merlot, giving the persistent finish a faint dryness.

Another killer Cote Rotie is the 2009 Cote Rotie la Landonne and it's a bigger, rich, more opulent version of the 2010. Raspberries, chocolate, exotic flowers, violets and ample minerality all give way to a full-bodied, seamless, layered 2009 that has massive mid-palate depth and a monster finish. Raised all in new oak, it should be drinkable at an earlier age than the '10, yet have a similar evolution.

The 2002 Dom Pérignon is unforgettable. Rich, sumptuous and flamboyant to the core, the 2002 captures all of the radiance of a year in which ripeness in the Chardonnays was pushed to the edge. The 2002 is oily and viscous on the palate, with tremendous textural resonance in all of its dimensions. Tropical fruit, pastry and exotic floral notes all build as the 2002 opens up with air. I can still remember the first time I tasted the 2002, here in the Hautvillers cloister, with former Chef de Caves Richard Geoffroy. It was thrilling back then, and is every bit as memorable today.

The 2002 Dom Perignon is at first intensely floral, with perfumed jasmine that dominates the bouquet. With time in the glass the wine gains richness as the flavors turn decidedly riper and almost tropical. Apricots, passion fruit and peaches emerge from this flashy, opulent Dom Perignon. The wine's volume makes it approachable today, but readers in search of more complexity will want to cellar this for at least a few years to allow for some of the baby fat to drop off.

And so from P1 methuselah to P2, which for Geoffroy ‘goes beyond Champagne’. P2, he continues, must be ‘deeper, richer, longer…better than P1' - otherwise why release it? Well, they haven't yet, although it's pencilled in for later in 2019. Here we have drive, vinosity and incredible length. The sweet and savoury balance indulges with a seductive embrace. Gustav Klimt in a glass maybe. Outstanding.

The 2009 La Tâche Grand Cru is the most ethereal of the three wines in this flight. Whole cluster influence is especially marked here. A whole range of spice, dried flower, mint and savory overtones infuse the 2009 with layers of nuance. Not a lot of wines leave me speechless from start to finish. But this wine did! Still deep, dark, almost inky in color, the wine offers off the hook aromas of smoked truffle, cigar box, tobacco, black and dark red fruit with spice box, tobacco leaf and smoke filled nuances. Deep, rich, full-bodied and with this incredible blend of elegance, power and sensuality, this wine is going to age for decades. Bright straw color with delicate bubbles. Intensely perfumed bouquet displays pear skin, nectarine, honeysuckle and citrus zest. Precise and clean on the palate, offering lively citrus fruit flavors and a deeper note of peach pit, this sparkling wine is more an expression of the variety than the process. A floral quality echoes on the long, spicy finish. Given the quality of their fruit, it is understandable why Huet concentrates on this purer kind of sparkling wine rather than the more widespread Champagne method, which masks the flaws of most overcropped chenin blancs harvested by machine in Vouvray.

The 2009 Il Caberlot has developed beautifully since I last tasted it. Dark red cherries, dark raspberries, rose petals, mint and licorice all explode from the glass. Rich, vibrant and beautifully alive, the 2009 impresses for its superb balance and class. This is a stunning wine that brings together the intensely savory personality of the Cabernet Franc/Merlot hybrid allied to the voluptuousness of the warm vintage. Today, the 2009 comes across as fresher and more vibrant than the 2011s. Any way you look at it, the 2009 is a stunning Caberlot.

(this was racked off its lees the day before my visit and was slated to be bottled before the 2011 harvest): Slightly cloudy yellow. Aromas of peach, apple, spices and crushed stone, with a hint of noble reduction. At once chewy and smooth, with a distinctly taut quality to its flavors of apricot, minerals, anise and flint. Finishes saline and powerful, with a flavor of custard pie as well as a note of grapefruit pith that tickles the taste buds. Lots of aging potential here.

Good medium red. Slightly reduced, reserved aromas of kirsch, minerals and clove. Quite taut in the mouth, and showing much more energy in bottle than it displayed from barrel in November of 2010. The medicinal redcurrant and red cherry fruit flavors are complemented by saline and pronounced spice qualities. Ultimately silky and classy wine, with a long, clinging finish that shows continuing spice character. This needs a good eight to ten years of bottle aging.

The greatest wines Chave has produced since 2003 are the two cuvees of 2009 Hermitage. The 2009 Hermitage exhibits a black/purple color along with a sumptuous nose of roasted meats, ground pepper, black currants, blackberry jam, and subtle smoke and licorice. The extraordinary bouquet is followed by a wine of extravagant intensity as well as tremendous focus and precision. While not as powerful as the blockbuster 2003, the amazing 2009 may turn out to be a modern day version of their magnificent 1990 (which is drinking incredibly well at present). Anyone who loves Hermitage and has a cold cellar should be lining up to get a few bottles of this beauty.

Wine Advocate (100)

An astonishing effort from the Rothschild family, the 2009 l’Evangile may be the reference point offering from this estate for decades to come. A blend of 95% Merlot and 5% Cabernet Franc aged in 100% new oak, with 15% natural alcohol, it exhibits a sumptuous bouquet of caramels, black raspberry liqueur, blackberries, violets, graphite and truffles. Thick, viscous flavors are reminiscent of such super-ripe vintages as 1982, 1959, 1949 and 1947. The striking aromatics, massive, full-bodied mouthfeel and multilayered palate that resembles a skyscraper in the mouth offer an abject lesson in great winemaking, extraordinary terroir, and the ability to combine power with precision, elegance and freshness. This is unquestionably a huge wine, but it also possesses mindboggling complexity and finesse. Because of its sheer extract and velvety personality, it will be drinkable in 4-5 years, and will keep for four decades or more where well-stored. The most profound L’Evangile ever made?

An incredible wine in every way, the 2009 Château Latour displays the ripe, sexy style of the vintage while still offering classic Latour power, density, and regalness. Currants, spicy wood, smoked tobacco, graphite, and ample minerality all define the bouquet, and it's full-bodied, with incredible density, perfectly integrated, ripe, polished tannins, and a finish that leaves no doubt about the insane quality of this wine. Based on 91.3% Cabernet Sauvignon and 8.7% Merlot, and checking in at 13.7% alcohol, it's drinking brilliantly today given its incredible texture and balance, and I suspect it has another 50-60 years of prime drinking.

Vinous (96)

Vinous (93-94)

(this was racked off its lees the day before my visit and was slated to be bottled before the 2011 harvest): Slightly cloudy yellow. Aromas of peach, apple, spices and crushed stone, with a hint of noble reduction. At once chewy and smooth, with a distinctly taut quality to its flavors of apricot, minerals, anise and flint. Finishes saline and powerful, with a flavor of custard pie as well as a note of grapefruit pith that tickles the taste buds. Lots of aging potential here.

Vinous - Stephen Tanzer (93+)

James Suckling (100)

The much-anticipated 2002 has impeccable detail and depth with a lot of chalky, stony and flinty elements on the nose as well as a very fresh edge. The nose is very complex and wound up tight but presents itself as very integrated and compressed. There are aromas of lemon rind, lime juice and a lime custard all at once, complemented in turn by a super-restrained hazelnut-like edge. Undertones of brown mushrooms, chalky minerals and lemon leaf. The palate has a core of sizzlingly intense, concentrated chardonnay framed whitin a powerful phenolic structure that will underpin the future of this Champagne. Flawlessly fresh and as perfect as it gets. Give this time as it needs to settle: best from 2020 and then for another decade beyond.

The deep garnet colored 2009 La Mission Haut-Brion absolutely sings of warm red and black currants, chocolate-covered cherries, liquid licorice, sassafras and espresso with hint of lilacs, pencil shavings and truffles. Full-bodied, rich, bold and oh-so-decadent in the mouth, the palate is completely packed with black fruit preserves and exotic spice layers, framed by wonderfully velvety tannins and seamless freshness, finishing epically long. Wow!

This is as good a Bordeaux as I've had and is as good as wine gets.

A classic second wine that shows outstanding potential, the dark ruby/purple-colored 2002 has notes of cedar wood, black currants, earth, and truffles in a medium to full-bodied, supple-textured, beautifully concentrated style that can be drunk now or cellared for 10-15 years.

Vinous (94+)

Good deep ruby. Rich aromas of currant and graphite minerality. Lush, round and large-scaled, with strong rocky and mineral qualities adding interest to its very sexy flavors of black raspberry and spices. Dry, classic, powerful cabernet whose broad tannins are amazingly supple for Mount Veeder. Finishes subtle and extremely long. An excellent vintage for this bottling, which is from vines planted at 1,700 feet.
