Deep ruby. Very ripe and warm on the nose, but not pruney or over the top. A big, round wine with lush dark berry and cherry compote flavors and a serious, chewy texture. A bit youthfully inexpressive today but the power and concentration of the material are obvious. Notes of espresso and candied licorice emerged with aeration. Just a powerhouse of a wine that does everything right, the 2000 Château Pavie is drinking incredibly well today, offering huge blackcurrant and chocolatey darker berry fruits as well as loads of truffly earth, tobacco, and spice. Full-bodied, deep, and concentrated on the palate, it stays flawlessly balanced, and while I suspect the acidity is quite low, it has an incredible sense of freshness and a weightless texture. Very dark crimson – looks much bluer than the 1996. Still bluer than the 2004. Savoury, complex, really rather gorgeous nose even if far from the first flush of youth. The luxury cuvee from Faugeres (owned by Bernard Magrez), the 2000 Peby Faugeres is the real deal. Sadly, only 500+ cases were made of this compelling St.-Emilion. An inky/blue/purple hue is accompanied by aromas of espresso roast, blueberry liqueur, smoke, and graphite. Thick and unctuously-textured with impressive purity and depth as well as full-bodied power and richness, it needs another 2-3 years of cellaring, and should last for two decades.In Bond£953.00
