  • Billecart-Salmon Cuvee Louis Salmon Blanc de Blancs 2012 (3x75cl)

    Named after the first chef de cave at Billecart, Louis Salmon, Billecart has been making this style since the ’60s, and it never disappoints. While 2012 had a very tricky start to the season, a remarkable vintage emerged because the summer was superb. The French expression, ‘Août fait le moût’, meaning ‘the month of August makes the must’, or rather, August is largely responsible for the calibre of flavour of any vintage, is startlingly accurate in this wine. With low yields, a lengthy hang-time, and decent natural alcohol levels of 10.5%, this 100% Grand Cru made up of 60% Le Mesnil, 23% Cramant, 11% Chouilly, and 6% Oiry is a ravishingly refreshing wine. 25% was vinified in barrel, and it was aged for a mighty 115 months before being bottled with a lean 3.9g/L dosage. Mathieu Roland-Billecart surmised that the 2012 sits between the 2002 and the 2008 in style – not as austere as ’02 and with “more meat” than ’08. Interestingly, the bottles were aged under crown caps, and the magnums were cork-sealed for maturation. We tasted these two formats side by side, and they indeed showed some fascinatingly different characteristics. The bottle format seemed lovely, silky, super-long and gloriously even. It is a slender, willowy wine with a palate that flows briskly with intent. Its flanks are glassy-smooth, and all of the acidity is reserved for the serious finish, which echoes the NV that proceeded it, except this time, there is much more tension and verve on display. The cork-cap-aged magnum discreetly showed more breadth on the nose and a hint of toastiness on the palate. It seemed to have picked up more of the oak nuances, carrying them further forward on the palate. The other difference is that the magnum appears more profound, as it billows on the palate initially, however I can see both formats converging somewhat over time. While they are both exactly the same wine, they might never end up tasting identical because every time you open a bottle, taking a ‘snapshot’ of their flavours, they will not be at the same spot of their respective timelines, and this makes them both must-haves for the serious Billecart aficionado! Billecart also made a handful of jeroboams in 2012 – albeit in tiny quantities – so goodness knows how different this format would taste.

    The Biondi-Santi 2013 Brunello di Montalcino Riserva is a stunning wine from all points of view. Seamless integration and elegant complexity are what stand out, and it's worth dedicating a few extra lines to the aromatic depth that is put so beautifully on display as the wine slowly unfolds. The bouquet starts off with wild cherry, earth, wet ash, crème de cassis and pruny chocolate. With extra time, there are hints of dried tobacco leaf, sandalwood and mossy forest floor. These lead to a fine tail of dried herb, bay leaf and a touch of rusty nail. The Riserva comes in numbered bottles, and I opened number 04277. To the palate, the wine is streamlined and silky with smooth tannins and a well-managed 13.5% alcohol content. The oak presence is reduced to a minimum, offering mild hints of spice and the delicate sandalwood or dried fig aroma I described above. Fresh acidity is the glue that gives the wine buoyancy and staying power. At this young stage, this 2013 vintage could be considered a bit shy or slow to start, but this will play out to great advantage in the long term as the wine continues its bottle evolution.

    The Biondi-Santi 2015 Brunello di Montalcino Riserva is initially a reticent wine and one that does not immediately subscribe to the overstated abundance and exuberance of the vintage. Give it time. I wrote this review after several tastings over several days so I could ensure a more accurate account of the wine's elegant reveal. Contemplative and exceedingly nuanced in personality, with wild berry, underbrush, ferrous earth and candied orange peel, this has everything to look forward to in terms of its future evolution in the bottle. It displays a pretty ruby color that borders on garnet and polished copper. A silky, mid-weight palate is accented by beautifully managed and silky tannins (this aspect of the mouthfeel is extraordinary), bright freshness and long-lasting fruit momentum. The alcohol is a bit more powerful in this release (at 14.5%), but the effect is supple and smooth nonetheless. I tasted bottle number 256.

The 2016 growing season was one of the best in recent memory in Montalcino, and if we look back in time, this vintage marks the year Biondi-Santi was sold to a French group. The prestigious 2016 Brunello di Montalcino Riserva proves a mighty collector's bottle that will undoubtedly gain in complexity and depth with careful bottle age. The wine offers wild nuances of forest berry and tart cherry, and there are herbal side notes as well as floral tones of dried violet and lilac. The tannins are soft, powdery and feel like they melt away on the palate.

Racy, piercing acidity hits the palate straight away along with such tiny, frothy bubbles that fill the mouth. The spine and tension is there, driving the wine forward with a clear vein of citrus acidity - a shot of lemon and lime, while still having the undercurrent of toasted, salty nuts. Nuanced and characterful with a hint of sweetness, sharpness and raciness all giving nuance and interest and building to an impressive whole. Well controlled with balance, construction and a gourmet feel. Made with Premier and Grand Cru grapes: Pinot Noir grapes from Mailly, Cumières, and Chigny-les-Roses, and Chardonnay grapes from Avize, Chouilly, and Vertus. Grapes are aged 12 years on their lees. Perhaps wait about ten years until the wine has reached its peak and completely integrated its enormous fruit with the barrel notes, but the wine is already magnificent with its deep ripe aroma of Gravenstein apples, backed by fresh wooden notes.     An immediate nuttiness of grilled hazelnut along with freshly cut red apple peel, an edge of white pepper and melted candlewax mark the nose – very unusual. With air, this slowly verges onto baked skin of plum. That nuttiness is also apparent on the palate with a real phenolic and textural element, there is much density, almost a chewiness. Very fine acidity runs through this wine, expressing the customary Bollinger creaminess, underlined by finest foam, revealing a lovely hint of pithy bitterness, more pepper and nuances of ripeness expressed by baking spice. A most gastronomic Champagne and only at the beginning of a long trajectory.

    It's striking that is as fresh as it is given the ten years in the cellars. It has a fine citrus nose with plenty of lemons, grapefruit and yellow chalky notes, not to mention some lighter floral elements. The palate is super dry (dosage at 3-4g), and there's a silky, sherbet-like texture that makes this smooth fine and long. The citrus flavors give way to the surging acidity and the finish twists very slowly through to lightly toasted cashew nuts mingled with complex fruit and citrus flavors. Disgorged October 22, 2013.

    The latest release of R.D. – Bollinger’s iconic ‘Recently Disgorged or Récemment Dégorgé’ wine is something completely out of the ordinary. My one-word description for this sensational wine is ‘controlled’. I say this because what I adore about every single vintage of R.D. which I have tasted (and there have been many – see below) is the seeming lack of control in every sip. R.D. should be and usually is an absurdly decadent and unpredictable wine, firing off ostentatious flavour and extraordinary detail in every direction. This is why I love it so much and also why I only open it on very special occasions! What is remarkable about this particular vintage is its restraint and levity coupled with the extraordinary length of finish. After 14 years on lees, this wine is as power-packed and energised as it could possibly be and with the extra edge and vivacity coming from a fulsome percentage of Verzenay Pinot fruit (29%) added to the usual heartbeat coming from the Aÿ Pinot core (26%) this is a dynamic red fruit-dominant cocktail. The overall blend is 70% Pinot Noir and 30% Chardonnay coming from 14 Crus with 91% Grands Crus in this vintage. The dosage is a keen 3 grams per litre and all disgorgement is done by hand, as usual. But in 2007 the result is atypical, enchanting, surprisingly refreshing and amazingly delicious. I opened this bottle at 11.00 am and did not stopper it for a full 12 hours. I even sneaked half a glass with a chicken curry at supper time and it worked like a dream. This is not a massive firework of a wine that explodes gloriously and then is gone. Instead, it is a blazing torch of flavour with phenomenal persistence and balance and this makes it unmissable in every serious Champagne lover’s cellar.

    The world has about 3,000 bottles to fight off of this extraterrestrial nectar. I am delighted that they have dared to have 8 grams of sugar in its dosage this seductive vintage. From the beginning, my senses are bombarded by colossal impressive, magnificent and colorful impressions. The essence of inflated fruit is similar to a Beerenauslese from Rheingau as well as white and red Burgundy of the finest brand. Extremely drinkable from start in a similar style as the 1990 and 1989 back in the days. Personally, I am convinced that VVF has become even more concentrated and high-graded when the vineyard in Bouzy disappeared and we are dealing with 100% Aÿ. 2008 has all the conditions to become one of history's greatest. Until then, I'm delighted to enjoy this deliciously sensuous dainty bit which on the highest volume conveys notes of orange marmalade, honey, roses, honeysuckle, olive oil, tar, black truffle and cep mushroom in a unisoned golden symphony

    Disgorged in September 2020 with four grams per liter dosage, Bollinger's 2008 Blanc de Noirs Vieilles Vignes Françaises is one of the monumental wines of this great vintage. Soaring from the glass with a generous, honeyed bouquet of pear, orange rind, dried fruits, mocha and toasted bread, it's full-bodied, textural and enveloping, with huge concentration, racy acids and a pillowy mousse. Vinous, rich and sumptuous, it concludes with an immensely long, resonant finish. Bollinger waited until the grapes of these ungrafted vines attained 11% potential alcohol before harvesting, and they have produced the most powerful wine of the vintage—as well as one of the most profound.

    Bollinger’s 2009 Vieilles Vignes Françaises is tightly wound and reserved, which is quite surprising given the warm, dry weather of the vintage. That won’t be a problem in time, of course, but readers should plan on being patient. With a few hours of air, apricot, plum, spice, dried cherry and candied orange peel start to appear, but the 2009 remains rather taut. In some years, VVF can be quite opulent, 2002 and 2010 come to mind. The 2009, on the other hand is much more vibrant. I wouldn’t plan on opening a bottle anytime soon. VVF remains one of the most compelling wines – still or sparkling – in the world. It emerges from ungrafted Pinot Noir vines in Aÿ’s Chaudes Terres and Clos St. Jacques lieu-dits and is vinified and aged in barrel. Dosage is 4 grams per liter.

    Named after the first chef de cave at Billecart, Louis Salmon, Billecart has been making this style since the ’60s, and it never disappoints. While 2012 had a very tricky start to the season, a remarkable vintage emerged because the summer was superb. The French expression, ‘Août fait le moût’, meaning ‘the month of August makes the must’, or rather, August is largely responsible for the calibre of flavour of any vintage, is startlingly accurate in this wine. With low yields, a lengthy hang-time, and decent natural alcohol levels of 10.5%, this 100% Grand Cru made up of 60% Le Mesnil, 23% Cramant, 11% Chouilly, and 6% Oiry is a ravishingly refreshing wine. 25% was vinified in barrel, and it was aged for a mighty 115 months before being bottled with a lean 3.9g/L dosage. Mathieu Roland-Billecart surmised that the 2012 sits between the 2002 and the 2008 in style – not as austere as ’02 and with “more meat” than ’08. Interestingly, the bottles were aged under crown caps, and the magnums were cork-sealed for maturation. We tasted these two formats side by side, and they indeed showed some fascinatingly different characteristics. The bottle format seemed lovely, silky, super-long and gloriously even. It is a slender, willowy wine with a palate that flows briskly with intent. Its flanks are glassy-smooth, and all of the acidity is reserved for the serious finish, which echoes the NV that proceeded it, except this time, there is much more tension and verve on display. The cork-cap-aged magnum discreetly showed more breadth on the nose and a hint of toastiness on the palate. It seemed to have picked up more of the oak nuances, carrying them further forward on the palate. The other difference is that the magnum appears more profound, as it billows on the palate initially, however I can see both formats converging somewhat over time. While they are both exactly the same wine, they might never end up tasting identical because every time you open a bottle, taking a ‘snapshot’ of their flavours, they will not be at the same spot of their respective timelines, and this makes them both must-haves for the serious Billecart aficionado! Billecart also made a handful of jeroboams in 2012 – albeit in tiny quantities – so goodness knows how different this format would taste.

    The Biondi-Santi 2013 Brunello di Montalcino Riserva is a stunning wine from all points of view. Seamless integration and elegant complexity are what stand out, and it's worth dedicating a few extra lines to the aromatic depth that is put so beautifully on display as the wine slowly unfolds. The bouquet starts off with wild cherry, earth, wet ash, crème de cassis and pruny chocolate. With extra time, there are hints of dried tobacco leaf, sandalwood and mossy forest floor. These lead to a fine tail of dried herb, bay leaf and a touch of rusty nail. The Riserva comes in numbered bottles, and I opened number 04277. To the palate, the wine is streamlined and silky with smooth tannins and a well-managed 13.5% alcohol content. The oak presence is reduced to a minimum, offering mild hints of spice and the delicate sandalwood or dried fig aroma I described above. Fresh acidity is the glue that gives the wine buoyancy and staying power. At this young stage, this 2013 vintage could be considered a bit shy or slow to start, but this will play out to great advantage in the long term as the wine continues its bottle evolution.

    The Biondi-Santi 2015 Brunello di Montalcino Riserva is initially a reticent wine and one that does not immediately subscribe to the overstated abundance and exuberance of the vintage. Give it time. I wrote this review after several tastings over several days so I could ensure a more accurate account of the wine's elegant reveal. Contemplative and exceedingly nuanced in personality, with wild berry, underbrush, ferrous earth and candied orange peel, this has everything to look forward to in terms of its future evolution in the bottle. It displays a pretty ruby color that borders on garnet and polished copper. A silky, mid-weight palate is accented by beautifully managed and silky tannins (this aspect of the mouthfeel is extraordinary), bright freshness and long-lasting fruit momentum. The alcohol is a bit more powerful in this release (at 14.5%), but the effect is supple and smooth nonetheless. I tasted bottle number 256.

The wine offers wild nuances of forest berry and tart cherry, and there are herbal side notes as well as floral tones of dried violet and lilac. The tannins are soft, powdery and feel like they melt away on the palate.

Racy, piercing acidity hits the palate straight away along with such tiny, frothy bubbles that fill the mouth. The spine and tension is there, driving the wine forward with a clear vein of citrus acidity - a shot of lemon and lime, while still having the undercurrent of toasted, salty nuts. Nuanced and characterful with a hint of sweetness, sharpness and raciness all giving nuance and interest and building to an impressive whole. Well controlled with balance, construction and a gourmet feel. Made with Premier and Grand Cru grapes: Pinot Noir grapes from Mailly, Cumières, and Chigny-les-Roses, and Chardonnay grapes from Avize, Chouilly, and Vertus. Grapes are aged 12 years on their lees.     An immediate nuttiness of grilled hazelnut along with freshly cut red apple peel, an edge of white pepper and melted candlewax mark the nose – very unusual. With air, this slowly verges onto baked skin of plum. That nuttiness is also apparent on the palate with a real phenolic and textural element, there is much density, almost a chewiness. Very fine acidity runs through this wine, expressing the customary Bollinger creaminess, underlined by finest foam, revealing a lovely hint of pithy bitterness, more pepper and nuances of ripeness expressed by baking spice. A most gastronomic Champagne and only at the beginning of a long trajectory.

It has a fine citrus nose with plenty of lemons, grapefruit and yellow chalky notes, not to mention some lighter floral elements. The palate is super dry (dosage at 3-4g), and there's a silky, sherbet-like texture that makes this smooth fine and long. The citrus flavors give way to the surging acidity and the finish twists very slowly through to lightly toasted cashew nuts mingled with complex fruit and citrus flavors. Disgorged October 22, 2013.

    The latest release of R.D. – Bollinger’s iconic ‘Recently Disgorged or Récemment Dégorgé’ wine is something completely out of the ordinary. My one-word description for this sensational wine is ‘controlled’. I say this because what I adore about every single vintage of R.D. which I have tasted (and there have been many – see below) is the seeming lack of control in every sip. R.D. should be and usually is an absurdly decadent and unpredictable wine, firing off ostentatious flavour and extraordinary detail in every direction. This is why I love it so much and also why I only open it on very special occasions! What is remarkable about this particular vintage is its restraint and levity coupled with the extraordinary length of finish. After 14 years on lees, this wine is as power-packed and energised as it could possibly be and with the extra edge and vivacity coming from a fulsome percentage of Verzenay Pinot fruit (29%) added to the usual heartbeat coming from the Aÿ Pinot core (26%) this is a dynamic red fruit-dominant cocktail. The overall blend is 70% Pinot Noir and 30% Chardonnay coming from 14 Crus with 91% Grands Crus in this vintage. The dosage is a keen 3 grams per litre and all disgorgement is done by hand, as usual. But in 2007 the result is atypical, enchanting, surprisingly refreshing and amazingly delicious. I opened this bottle at 11.00 am and did not stopper it for a full 12 hours. I even sneaked half a glass with a chicken curry at supper time and it worked like a dream. This is not a massive firework of a wine that explodes gloriously and then is gone. Instead, it is a blazing torch of flavour with phenomenal persistence and balance and this makes it unmissable in every serious Champagne lover’s cellar.

    The world has about 3,000 bottles to fight off of this extraterrestrial nectar. I am delighted that they have dared to have 8 grams of sugar in its dosage this seductive vintage. From the beginning, my senses are bombarded by colossal impressive, magnificent and colorful impressions. The essence of inflated fruit is similar to a Beerenauslese from Rheingau as well as white and red Burgundy of the finest brand. Extremely drinkable from start in a similar style as the 1990 and 1989 back in the days. Personally, I am convinced that VVF has become even more concentrated and high-graded when the vineyard in Bouzy disappeared and we are dealing with 100% Aÿ. 2008 has all the conditions to become one of history's greatest. Until then, I'm delighted to enjoy this deliciously sensuous dainty bit which on the highest volume conveys notes of orange marmalade, honey, roses, honeysuckle, olive oil, tar, black truffle and cep mushroom in a unisoned golden symphony

Vinous, rich and sumptuous, it concludes with an immensely long, resonant finish. Bollinger waited until the grapes of these ungrafted vines attained 11% potential alcohol before harvesting, and they have produced the most powerful wine of the vintage—as well as one of the most profound.

    Bollinger’s 2009 Vieilles Vignes Françaises is tightly wound and reserved, which is quite surprising given the warm, dry weather of the vintage. That won’t be a problem in time, of course, but readers should plan on being patient. With a few hours of air, apricot, plum, spice, dried cherry and candied orange peel start to appear, but the 2009 remains rather taut. In some years, VVF can be quite opulent, 2002 and 2010 come to mind. The 2009, on the other hand is much more vibrant. I wouldn’t plan on opening a bottle anytime soon. VVF remains one of the most compelling wines – still or sparkling – in the world. It emerges from ungrafted Pinot Noir vines in Aÿ’s Chaudes Terres and Clos St. Jacques lieu-dits and is vinified and aged in barrel. Dosage is 4 grams per liter.
