Aromas and flavors of black raspberry, spices and dried flowers are complicated by a suggestion of underbrush. Still tight and evolving at a snail's pace, displaying a touch of sweetness and decadence but framed by brisk acidity. A rather traditionally styled Pommard with a serious dusting of tannins and a late note or orange zest. Nicely balanced wine, but with its strong acidity and dusty tannins still in need of a couple more years of aging--or some time in a decanter.

Deep, dark red and black fruit aromas are complicated by cinnamon, black pepper, roast coffee and a hint of truffley underbrush. Wonderfully rich but classy and reserved, and not a bit heavy. Utterly silky, plush, energetic wine with a relaxed quality to its lively dark fruit and dark chocolate flavors. Finishes classically dry, with beautifully buffered tannins and captivating building sweetness. Amazingly, this 375-milliliter bottle seems still short of its peak, so I would imagine that well-stored 750s still need time. I'd guess 2022-2042 for 750s.

Spicy, fine-grained and vibrant on the palate; not especially sweet or fleshy but surprisingly fresh and easy to drink, showing lovely ripe acidity and excellent retention of fruit. This may not have the thickness of today's Mortet wines but it's just entering its plane of peak maturity. Finishes with fine-grained tannins and terrific spicy length. Arnaud Mortet noted that his father Denis aged this wine entirely in new oak.

The 1999 Dom Pérignon P2 is one of the most intriguing Champagnes I have tasted from Dom Pérignon in recent years. In fact, it was not included in a small vertical I tasted at the estate in March, but rather this is a bottle I tasted with friends in London. According to Chef de Caves Richard Geoffroy, the 1999 was a very small release and was only shipped to a few countries. What I admire most about the 1999 is its laser-like focus and intensity. In that sense, the 1999 is a bit atypical from other recent P2 releases, as it emphasizes a range of citrus and floral-driven bright notes more than the toasty quality these Champagnes tend to show after extended time on the lees. Regardless, I loved it.

Smoke, tar, leather and herbs open up in a mysterious, intensely perfumed Burgundy that has so much still to say. The broad, textured finish makes it impossible to resist a second taste, and then a third. I expect the 1999 will drink well for another 20 years, perhaps longer. This is a fabulous showing for the Grands-Échézeaux.

The bouquet sends you straight to heaven with so much purity and detail that frankly it is difficult to put into words. Fleeting glimpses of redcurrant, then pomegranate, broom and wilted rose petals, later more earthy scents, autumnal. The palate is perfectly balanced with filigree tannin, a symmetry that is utterly entrancing and precision second to none. Hints of black plum and blood orange, that mineralité returning towards a finish so tensile you risk cutting yourself. I would have given this my second score had the 1999 Romanée-Conti been in the next glass. Tasted at the 1999 DRC dinner.
