All of the fruit is 100% destemmed, and fermentations take place in concrete tanks with gentle punch-downs twice a day, which they prefer over pump-overs to limit the amount of oxygen ingress. The juice is left in the tank for about two weeks before being racked to barrel for malolactic and ageing; the juice is left to settle for two days prior to being racked to barrel. A fair amount of new oak is used in the wines; the village wine, for example, is aged in 60% new François’ Frères oak barrels for an average of 16 months before bottling without filtration. Each label is a benchmark for quality, and they are often hallmarked by a generous and elegant style.

The 2019 Volnay Clos de Verseuil 1er Cru, a monopole of the domaine, is completely de-stemmed and matured in 30% new oak. It has one of my favourite bouquets with gorgeous shimmering red fruit laced with rose petal and light incense aromas, all beautifully defined. The palate is slightly reduced but that does not disguise the intense, mineral-driven red fruit that merges into darker fruit and more saline notes towards the finish. The 2019 Echézeaux Grand Cru, which comes from the lieu-dit of Les Champs Traversins, has a well-defined bouquet of raspberry and wild strawberry fruit, loamy/sous-bois scents and a touch of wilted iris petals. The palate is medium-bodied with fine-boned tannins, crisp acidity and a lightly spiced finish. This is a well-crafted Echézeaux from Bichot/Clos Frantin, and it should give 15–20 years’ drinking pleasure, possibly more.Inc. VAT£1,484.44 -

(from a large 1.76 ha parcel). Here too there is enough wood to notice but not to intrude on the exceptionally spicy and overtly floral-suffused nose of dark currant and plum. There is outstanding intensity, muscle and power to the broad-shouldered flavors that brim with both minerality and dry extract on the sappy, mouth coating, robust and youthfully austere finish that goes on and on. The 2019 Auxey-Duresses 1er Cru, a blend of two vineyards Les Beautrains and Les Bas des Duresses as usual, matured in around 25% new oak. It has a refined bouquet with a little more purity and sensuality compared to the Auxey Village. The palate is well balanced with gentle grip on the entry, quite rich but fresh in style with candied orange peel infusing the mixture of black and blueberry fruit. Crunchy, almost brittle texture towards the finish which is surprising given the type of growing season. Recommended.Inc. VAT£284.44 -

The 2019 Auxey-Duresses Village, which sees no new oak, has a ripe bouquet with opulent dark cherries, iodine and light violet aromas that soar from the glass. A riper and more restrained nose requires some swirling to reveal its aromas of plum liqueur, blue berry, earth and a more restricted range of spice elements. The bigger and richer flavors possess an opulent richness and a velvety texture that coats the palate and enrobes the firmer tannic spine shaping the powerful, tautly muscular and strikingly persistent finale. This offers a completely different expression compared to the Amoureuses but one that is equally interesting. This too possesses superb development potential though patience definitely advised. The 2019 Vosne-Romanée Aux Reignots 1er Cru was showing just a small reduction on the nose, but that is shaken off with some aeration to reveal intense dark plum and citrus fruit plus touches of blood orange. The 2019 Vosne-Romanée Les Suchots 1er Cru has a gorgeous bouquet with perfumed black cherry and blueberry fruit, wilted iris petals and just a faint of lavender scent. The palate is rounded on the entry with juicy ripe red fruit laced with clove and white peppers, quite savory towards the finish that just lacks the sophistication of other Les Suchots that I tasted. The 2019 Chambolle-Musigny Village, which contains 40% whole bunch, takes a few swirls of the glass to meld together, finally delivering airy blackberry and bilberry scents, perhaps more Morey in style than the titular village. The palate is medium-bodied with crunchy black fruit, a granular texture and a salty, slightly brusque but fresh finish. Fine, but it will need some bottle age to smooth its edges. A second cuvée without the stems is perhaps just a little less interesting on the nose. The 2019 Vosne-Romanée Aux Reignots 1er Cru was showing just a small reduction on the nose, but that is shaken off with some aeration to reveal intense dark plum and citrus fruit plus touches of blood orange. The palate is velvety-smooth with finely pitched acidity and good tension. Quite sappy toward the finish, with the structure and persistence one expects from such a noble Premier Cru. The 2019 Nuits Saint-Georges Les Vignes Rondes has a perfumed, floral bouquet, a mixture of red cherries, cranberry and rose petal that open nicely with aeration. The palate is medium-bodied with grippy red berry fruit and chalky textured with a stern and rather rigid finish. The 2019 Vosne-Romanée Les Suchots 1er Cru has a gorgeous bouquet with perfumed black cherry and blueberry fruit, wilted iris petals and just a faint of lavender scent. The palate is rounded on the entry with juicy ripe red fruit laced with clove and white peppers, quite savory towards the finish that just lacks the sophistication of other Les Suchots that I tasted. Not a bad Vosne-Romanée by any means, but it needs more finesse in the final quarter.In Bond£909.00 -

The 2019 Chambolle-Musigny Village, which contains 40% whole bunch, takes a few swirls of the glass to meld together, finally delivering airy blackberry and bilberry scents, perhaps more Morey in style than the titular village. The palate is medium-bodied with crunchy black fruit, a granular texture and a salty, slightly brusque but fresh finish. Fine, but it will need some bottle age to smooth its edges. A second cuvée without the stems is perhaps just a little less interesting on the nose. Thomas Collardot is not sure what the final blend will constitute but I suspect there will be a few stems in there.In Bond£407.00
